Oh how I LOVE shrimp in the summertime.  They’re light fresh and you can just cook them so quickly!  They are also super versatile, I mean you can practically add anything to them and they’ll turn out delicious.  These margarita shrimp skewers definitely do not disappoint either!  Not only are these EASY to make (only takes about 10 minutes!), but they only require just a few simple ingredients.  A perfect heathy meal that is fresh and delicious, oh and there is tequila.  So yeah there’s that.

This recipe is practically guilt-free too!  Little to no carbs, low in fat, low in calories, good source of protein, but trust me, these shrimp have TONS of flavor!

Ingredients You’ll Need

  • Shrimp
  • Lime juice + zest
  • Olive oil
  • Garlic
  • Tequila (yaaas!)
  • Fresh cilantro

How to Make Margarita Shrimp Skewers

  1. Marinate the shrimp.  First whisk together all your ingredients in a bowl and then toss with the shrimp.  Cover and let the shrimp marinate in the fridge for at least 30 minutes, but no more than 4 hours as the acidity in the lime juice will start to breakdown the shrimp if left too long.  I also like to reserve a bit of the sauce to brush over the shrimp once it’s cooked.
  2. Thread your skewers. Once the shrimp has marinated, simply thread the shrimp onto the skewers and they are ready for the grill!  This recipe makes about 5 to 6 skewers.  If using wooden skewers, make sure to soak them for at least 30 minutes to prevent them from burning on the grill.  I also use these skewers and they work great!
  3. Time to grill!  Pre-heat the grill on medium-high heat and spray with a little oil so that the shrimp doesn’t stick.  Place the skewers on the grill and cook about 2 to 3 minutes per side, until the shrimp is pink.  Feel free to brush the reserved marinade over top as they cook for even more flavor!
  4. Ready to eat!  You can serve these shrimp over rice, quinoa, or even this delicious cilantro lime cauliflower rice.  Don’t forget your margarita! 😉

Margarita Shrimp Skewers

Ingredients 

  • 1 lb. shrimp, peeled and deveined
  • 3 Tbsp fresh lime juice
  • 1/2 tsp fresh lime zest
  • 1 Tbsp olive oil
  • 2 tsp tequila
  • 3 cloves garlic, minced
  • 3 Tbsp fresh cilantro, chopped
  • 1/4 tsp salt
  • Pinch of cayenne pepper
  • 12 bamboo skewers, soaked

Instructions 

  • Soak bamboo skewers for about 20 minutes in cold water; set aside.
  • Whisk together lime juice, zest, olive oil, tequila, garlic, cilantro, salt and cayenne pepper in a bowl. Place peeled shrimp in a large ziplock bag and pour marinade over shrimp, shaking to combine. Allow shrimp to marinate in the fridge for at least 30 minutes or up to 4 hours.
  • Preheat grill on medium to high heat, making sure to lightly spray with oil to avoid sticking.
  • While grill is heating up, start threading your shrimp onto the bamboo skewers and discard the marinade. Place the skewers on the grill, cooking shrimp until they turn pink, about 2 to 3 minutes each side. Serve and enjoy!
