Ok so I had this unhealthy craving for Chipotle the other day {who doesn't?!} and knew I had to do something about this or I would end up buying one of everything on the menu. Ok not really, but I seriously needed a good Chipotle fix.
Ok so I had this unhealthy craving for Chipotle the other day {who doesn't?!} and knew I had to do something about this or I would end up buying one of everything on the menu. Ok not really, but I seriously needed a good Chipotle fix.
So I basically chopped up everything I had leftover in my fridge and pantry and threw it all into a bowl to make this colorful, and yes completely CLEAN, dish. It has all the flavors of Chipotle without the extra calories! I used all fresh ingredients, a bit of sea salt, a drizzle of olive oil and some limes. Kind of amazing I must admit.
This recipe makes a great salsa or even a fabulous topping on chicken, pork or steak. You could even garnish your tacos with this....and to quote the Frank's Red Hot lady, you can literally put this sh*t on everything!
But in all seriousness, this is a great side dish to add flavor to any meal, especially when prepping your food for the week. I paired this with whole wheat pita bread and some chicken and it was a huge hit. Oh and all the chopping is the hardest part of this recipe, you can whip this entire thing together in 5 minutes!

Here are your ingredients:
1 onion, chopped
1 garlic clove, chopped
1 Tbsp lime zest
3 Tbsp lime juice (about one lime)
1/4 tsp. sea salt
4 Roma tomatoes, chopped
1 cup orange, red, yellow bell pepper, chopped
1 jalapeno, seeded and diced
1 cup black beans
1 cup frozen corn
1/2 cup cilantro, roughly chopped
2 tsp. olive oil
In
a large bowl, combine all ingredients and stir well. Allow flavors to marinate for about 2 hours then serve and enjoy!

Ooh, looks yummy! I've never tried Chipotle's bowls. I tried to do the burrito thing but was so ticked they give you a rumpload of rice and a strip of chewy meat that I didn't bother going back after two tries.

I almost NEVER cook, but this is actually something I make all the time! I like it better with red onion as opposed to white, and I add toooons of cilantro, probably too much! haha.
I've never had a Chipotle bowl, but I think this makes a perfect summer salad.

That seriously looks like heaven. Chipotle is my number one, favorite of all time place to eat at, but the closest one is over a half hour away! I'm definitely trying this this weekend :)

This looks amazing, we make burrito bowls all the time.
I would truly be headed upstairs to recreate this for lunch right now if I had cilantro in the house! It just would not be the same without cilantro. Maybe I`ll have some sort of healthy bean salad for lunch instead, and try this sometime soon.

I am definitely enthusiastic about trying the recipe, but I am not sure it will be as amazing as Chipotle's secret recipe itself. And I'm not only saying that since my soon-to-be-husband is a Kitchen Manager for the Grand Junction, CO store. ;P

This looks yummy. I love black beans and they are perfect for a healthy diet. Black are nutritious and high in fiber which help flush fat out of the body. I can not wait to try it.

Hmm! So refreshing! I love all the colors in this salad. This will go well with light flavored fish or chicken to make it like a complete meal (especially my husband who needs "main" dish). Very inspiring dish!
