Tomato-Basil Soup

Mmm one of my favorite go-to foods on cold, dreary days are soup and grilled cheese sandwiches.  Nothing screams "comfort" more than this delicious duo and I can almost guarantee it'll perk you right up from however you were feeling before.

As most of you know, I wasn't having the greatest of weeks last week and so I did what any normal person would do when they realize their identity has been stolen and someone was trying to go on shopping sprees with their hard-earned money...I took the day off from work.  Ok so truth is my car was broken down and I literally had no means of transportation, BUT it was still the perfect day to sleep in, catch up on my guilty pleasures (aka Real Housewives) and attempt to cheer myself up.

Thankfully I didn't turn to a gallon of vanilla ice cream to drown my sorrows in, I decided to try this tomato-basil soup recipe that had been sitting on my kitchen counter for weeks now.  It truly was the greatest pick-me-up and took me only 20 minutes to throw together.

Now THAT'S my kind of lunch!

Here are your ingredients:
Recipe adapted from Cooking Light 
 
1 Tbsp olive oil
1 1/2 cups chopped onion
3 garlic cloves, chopped
3/4 cup fresh basil, chopped
1 (28 oz) can fire-roasted diced tomatoes, undrained
1/2 cup (4 oz) 1/3-less fat cream cheese, cut into cubes
1 1/2 cups fat-free milk
1/4 tsp. salt
1/4 tsp. pepper

In a large saucepan over medium-high heat, heat olive oil and saute the chopped onion for 3 minutes, until translucent.  Stir in garlic and cook for an additional minute.  Add tomatoes and basil, bringing to a boil.  Stir in cream cheese until melted.

Place mixture in a blender or food processor and blend until smooth.  Return to saucepan and stir in milk, salt and pepper.  Return to medium-high heat and cook for 2 minutes.  Serve with toasted bread or a sandwich, enjoy!

Sweet Potato and Cranberry Saute

Ok so let's be honest.  Is there anything more delicious than apples, sweet potatoes, cranberries and hazelnuts simmering all together in apple cider on a cool Fall Day??

No this is not a trick question.

The answer is there really isn't.

As you know, I'm not a coffee person at all so apple cider is one of my favorite go-to drinks in the mornings when the weather outside is super chilly.  And if you have a Keurig at your office like I do then you KNOW how amazing the hot apple cider is!  So when I saw this yummy saute in my Better Homes and Gardens magazine, I knew I had to try it, especially since it incorporates all my favorite things I love about Fall.

Except pumpkin of course.
But we'll get to that a little later.

Here are your ingredients:
Recipe adapted from Better Homes & Gardens

1 1/4 cups apple cider (or apple juice)
1 lb. sweet potatoes, peeled and cut into slices (about 3 cups)
1 cup chopped apple (1 large)
2 Tbsp dried cranberries
1/4 cup pure maple syrup (or agave nectar)
1/4 tsp. salt
2 Tbsp chopped hazelnuts, toasted 

In a large skillet, heat apple cider until just simmering.  Add sweet potato slices, spreading evenly.  Cover and cook over medium-low heat about 12 minutes or until potatoes are nearly tender.  

Stir in chopped apple, cranberries, maple syrup and salt.  Cook covered over low heat for 3 to 4 minutes more or until apple is just tender.  Uncover and boil gently for about 4 minutes until liquid is syrupy.  Sprinkle with nuts and enjoy!

Lavender Lemonade

Yes I know it's Fall, but the weather is still absolutely gorgeous and lemonade tastes great during any season!  There just so happens to be tons of gorgeous lavender growing outside my house and when I came across this recipe on one of my favorite design blogs (while looking for decorating ideas to pin...duh) I knew I just had to make it!

Of course I did color the water a bit, just to make it pretty, but you can't taste the coloring at all (I promise!) and it's definitely not necessary.  I simply mixed 1/4 cup water with one drop of blue coloring with one drop of red and voila!  A stunning purple color that I just added into the pitcher.

I just LOVE making homemade lemonade the old fashioned way and chose to cut the sugar in half and use raw agave nectar as an additional sweetener.  You can use honey too if you'd like, you really can't mess this up if you tried!

Garnish with some sliced lemons and a few sprigs of lavender and you've got yourself one stunning drink.

Here are your ingredients:
Recipe adapted from Centsational Girl and Joy the Baker 
 
2 cups water
1/2 cup sugar
1/4 cup agave nectar (or honey)
3 Tbsp dried lavender
2 cups freshly squeezed lemon juice
4 cups water
1 lemon, sliced (for garnish)
 
Over medium heat, combine two cups of water and sugar, bringing to a boil until sugar is dissolved.  Remove from heat and stir in agave nectar and dried lavender.  Cover for about 15 minutes, allowing mixture to steep.  Strain lavender, making sure to release all juices and syrup.
 
In a large pitcher, combine freshly squeezed lemon juice, lavender mixture and water.  Feel free to add a drop of blue coloring and a drop of red to mixture to give it a lovely purple color.  Chill for at least 2 hours and serve over ice.  Enjoy!

Cranberry-Maple Cinnamon Rolls

Anytime I think of Fall
I think of gooey yummy delicious cinnamon rolls.
And spiced pumpkin lattes.

Duh.

I must admit the past few days have been pretty rough for me {yes this would be the part where I insert my own personal venting sesh because this is a blog and we can write whatever we want, right?}  Long story short, I had my identity stolen which compromised all my bank accounts and social security number...which isn't the greatest timing since I'm currently in the middle of purchasing a home and waiting on a loan approval.  So if placing fraud alerts on my credit and freezing/cancelling bank accounts weren't enough for one day, of course my car had to break down on my way home.

Crap.

Yes when it rains, it seriously POURS.  Not to mention it's kind of hard to get your car fixed when your bank account is currently frozen.  Moral of the story?  Cheer yourself up with your favorite comfort food on days that you pretty much wish you could do over!

Cinnamon rolls, truly the single greatest comfort food.  But comfort doesn't always have to mean unhealthy!  These are made with whole wheat flour and very little butter.  Sweetened with pure maple syrup and a touch of brown sugar, these cinnamon rolls are certainly something to swoon over!

Feel free to plump your cranberries up before baking by mixing them with a little water and nuking them in the microwave for about 30 seconds.  I love this little secret and it really brings out their flavor!

Here are your ingredients:
Recipe adapted from Better Homes and Gardens
 
1 cup fat-free milk
2 Tbsp pure maple syrup (or agave nectar)
2 Tbsp butter
1 tsp. salt
1/4 cup warm water
1 package active dry yeast
1 egg, lightly beaten
1 1/4 cups whole wheat flour
2 1/2 cups all purpose flour
1/3 cup packed brown sugar
2 tsp. ground cinnamon
1/4 cup dried cranberries
1/4 cup chopped pecans, toasted

Maple-Brown Sugar Icing:
 
2 Tbsp packed brown sugar
1 Tbsp very hot water
3/4 cup powdered sugar
1/4 tsp. maple flavoring
1-2 tsp. fat-free milk

In a large bowl, combine warm water and yeast and allow to stand for 10 minutes.  Meanwhile, heat milk, maple syrup, butter and salt in a small saucepan over medium heat until just warm then set aside.  Using a stand mixer, add egg and milk mixture to yeast mixture and slowly add in the whole wheat flour.  Add as much all-purpose flour as you can, reserving the rest.

Turn out dough onto a lightly floured surface.  Knead in enough of the remaining flour to make dough moderately soft so that it is smooth and elastic (kneading about 3 to 5 minutes).  Shape dough into a ball and place in a lightly greased bowl, turning once to grease surface of dough.  Cover with plastic wrap and let rise in a warm place for an hour until doubled in size.  Punch down dough and turn out onto a lightly floured surface, cover and let rest for 10 minutes.

Meanwhile, lightly grease a 13x9-inch baking pan and set aside.  In a small bowl, combine brown sugar and cinnamon.  Stir in dried cranberries and pecans.

Roll dough into a 15x8-inch rectangle.  Sprinkle with pecan mixture, leaving one inch unfilled along one of the sides.  Starting from the long filled side, roll up rectangle.  Pinch dough to seal seam and slice into 15 equal pieces.  Arrange pieces, cut sides up, in prepared baking pan.  Cover and let rise in a warm place, about 30 minutes, until nearly doubled in size.

Preheat oven to 375 degrees F.  Bake for 25 to 30 minutes or until golden brown.  Meanwhile, in a small bowl combine brown sugar and the hot water, stirring to dissolve brown sugar.  Whisk in powdered sugar and maple flavoring.  Whisk in enough milk to make drizzling consistency.  Once rolls are done, let them cool for about 5 minutes and remove rolls from pan.  Drizzle with maple-brown sugar icing and enjoy!

Mini Maple Pecan Pies

Holy Fall y'all!!

It's finally time to bust out my boots and scarves and stand in line for a good 30 minutes for that pumpkin spiced latte I've been craving since last year (yes I know I said I hate coffee, but c'mon...exceptions must made).  And what better way to kick off this gorgeous season than with some pecan pie??

I found this adorable recipe on one of my favorite blogs Dashing Dish and just couldn't pass up making these!  They're quick, effortless and at only 42 calories per serving, I promise your waistline will thank you!

Now you may be wondering where all the filling went in these tarts??  Well for one, when I returned home from the store I found that most of the shells had either cracked or lost some of their layers (ugh!) and two, I really didn't feel like driving all the way back to the store for a new package so I managed to salvage what I had.  Yes...I'm lazy, but moving on.  They were still absolutely delicious, but it did cause some of the filling to seep out of the cracks in the bottoms.  For those of you with NON-cracked shells (lucky), your filling should bake nicely over top of the pecans and make a gorgeous presentation!

I absolutely love these mini pies for the pure fact that they make great party treats and cute desserts!  If you're anything like me, when you go to parties, you probably stick to appetizers and desserts that are bite-sized and simple to eat.  Well lucky for you, these fall nicely into that category and would look amazing on any Thanksgiving table!

Here are your ingredients:
Recipe adapted from Dashing Dish

1/4 cup egg beaters (or 1 egg)
1/4 cup sugar free maple syrup (or agave nectar)
1/4 cup Stevia baking blend
1/2 cup chopped pecans
1 box mini fillo shells (15 shells)

Preheat oven to 350 degrees F.  Place fillo shells on prepared baking sheet and fill evenly with chopped pecans.  In a small bowl, whisk together egg beaters, maple syrup and Stevia and pour over tarts, filling just to the top.  Bake for 15 to 20 minutes until golden and enjoy!
