Apple Cinnamon Baked Oatmeal

Look!  I actually made a recipe!
And it's a new favorite I should probably add.
Filled with apples, cinnamon, raisins, pecans.....um need I go on?

Yeah didn't think so.

I actually had a lot of fun making this breakfast dish (or dessert, whichever way you want to look at it) and when I tell you this was super easy, I mean like legit EASY.  Throw it all in a bowl, mix it up, throw it in a dish and bake - DONE.  The only time consuming requirement is chopping up your apples and you can do that while waiting for your morning coffee to brew.

Or hot chocolate if you're like me.
My coffee haters not-so anonymous meetings are going well.

I came up with this idea simply from my french toast recipe (how horrible is that old picture by the way...eek).  Anyhoo, I used the same concept except mixed in rolled oats in place of bread along with apples, raisins and chopped pecans.  No butter or oil necessary and if making this for dessert, feel free to throw a dollop of vanilla ice cream right smack on top.

Now go stuff your face.

Here are your ingredients:

2 cups whole wheat rolled oats
1 1/2 tsp. baking powder
3/4 tsp. salt
2 Tbsp chopped pecans
1/4 cup raisins
2 cups diced apples (I used Granny Smith)
3 eggs
2 cups fat-free milk
1/2 tsp. vanilla extract
3 Tbsp Splenda brown sugar blend (or 1/3 cup light brown sugar)
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg

Preheat oven to 325 degrees F.  Grease an 8-by-8-inch baking dish and set aside.

In a small bowl filled with hot water, allow raisins to soak for about 5 minutes until nice and plump.  In a large bowl, mix together oats, baking powder and salt.  Stir in apples, pecans and raisins, then set aside.

In another bowl, whisk together eggs, milk, brown sugar, cinnamon and nutmeg.  Pour over dry mixture and gently stir to combine.  Pour everything into greased dish and bake for about 1 hour, until golden brown.  Serve and enjoy!

i love that people are thinking of oatmeal in more ways than just those silly packets, or something that old people eat.... i frequently make steel-cut oats in the crock pot for a week's worth of breakfasts and it's SO good, healthy, and super simple to make... thanks for sharing!

Will be making this in the morning, thanks! I wonder, can you freeze the rest to use in the future (I have a boyfriend who is anti-oatmeal anything) or should I just halve the recipe?

Thanks for any help.

Kelly | Eat Yourself Skinny said...

Katie - I would probably halve the recipe as I don't think this would freeze very well, but perhaps I'll try that and see! :)

P.S. your kitchen is coming together perfectly!

I love your new kitchen too! Do you think this oatmeal could be prepared the night before and put on low in the slow cooker overnight?

Amber @ Slim Pickins Kitchen said...

Ha! That old picture wasn't *that* horrible...well, at least you tried to sorta, somewhat, a little bit style it. The second I looked at this recipe my immediate thought was vanilla frozen yogurt. YUM-O. PS. I am so incredibly jealous (but still super happy for you) of your gorgeous new house! Uuuugh...I have to keep telling myself: my time will come, my time will come...le sigh... ;)

This looks good, did you mean rolled oats, or old fashioned oats instead of whole wheat. Or is there something new and great out there :)

I was about to write down this recipe until I saw the 3 eggs. I am VEGAN, any other substitution? Carol:-)

Pamela said...

What is "whole wheat rolled oats"? Isn't wheat and oats two separate distinct grains? Do you mean steel cut oats? Help!!

Kelly said...

Carol -the eggs are unnecessary, just leave them out. Check out a similar recipe by Betty Crocker that doesn't use eggs. I've made it twice and it is amazing.

WhatAmIDoing said...

I believe she meant whole grain rolled oats. I used old fashioned and it was delicious.
