There is nothing better than steaming hot pancakes and the smell of apples, cinnamon and nutmeg on a chilly Sunday morning. After an emotionally charged weekend saying goodbye to my brother and watching his bus pull away en route to Afghanistan, these were just the pick-me-up I needed to finish off my long weekend.
Made with whole wheat flour, spiced with ginger, cinnamon and nutmeg, and tossed together with some unsweetened applesauce, these pancakes are lightened-up, yet taste sinfully delicious! So on your next lazy weekend, feel free to indulge!

Here are your ingredients:
1 cup all-purpose flour
1 1/4 cups whole wheat flour
1/4 cup packed brown sugar
2 tsp. baking powder
1 tsp. ground ginger
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 1/2 cups non-fat buttermilk
3 Tbsp unsweetened applesauce
In a large bowl, combine flour, brown sugar, baking powder, spices, baking soda and salt and make a well in the center of the flour mixture. In a separate bowl, whisk together eggs, buttermilk and applesauce and add to the flour mixture, mixing until just combined. Batter will be slightly lumpy.
Heat a greased skillet over medium heat and spoon about 1/4 cup batter onto skillet. Cook over medium heat for about 2 minutes on each side or until pancakes are golden brown. Flip over when surface is bubbly and edges are slightly dry.
Serve warm and garnish with fresh apple slices and a bit of pure maple syrup, enjoy!

I am going to make these this weekend, finally a weekend off to cook! Wanted to say my prayers are with your brother, and say thank you to him for serving! I am a Mom of a Sailor, it is such a journey. My husband served in the Army, joining after we were married! SO thankful for the families of those that Serve, because they are truly what keeps the home fires burning....

Kelly, these look so fluffy and packed with fall goodness. The hubs and I are big proponents of comforting, lazy fall breakfasts, and these look like winners to me.
Also love the spice combo and am always looking for new ways to combine fall flavors--I did oatmeal w/ apples, cloves, cinnamon, and nutmeg this morning. Tomorrow, I'm swapping for your ginger-cinn-nutmeg ratio. YUM!

These were sooo good. But there were tiny little hard things I would crunch down on every now and then. Next time I make these (there will be another time) I will try to figure out what that is! :D
I'm so glad you liked them! I think the crunchy things might have been the brown sugar clumps :) Best way to fix that is to separate the sugar with your fingers when adding it into your mixture, hope that helps!!

Oh. My. Gosh. These were the MOST AMAZING PANCAKES I HAVE EVER HAD IN MY ENTIRE LIFE!!!!!!!!!!!!!!!!! I could not believe how delicous they were. I was worried about how thick the batter was, but it was perfect. The smell was my first hint that they would be fantastic. It took a LOT of self control not to go back for thirds, fourths, etc. Thanks again! Can you tell I'm excited? Can't wait to wake up so I can have some more for breakfast. haha
