Apple Cinnamon Quinoa Cereal

Ok so let me just warn you.
This might be the best breakfast I've ever had.

And don't let the pictures fool you, that bowl is legit.  I was really disappointed with how they turned out though, but seriously this recipe was just too delicious not to share!  This quinoa reminded me so much of the oatmeal my mom used to make us as kids, except this had a lot more flavor....and chunks of sweet apple, duh.

And no your eyes do not deceive you, I did pair this with my skinny cinnamon raisin scones for a swoon-worthy breakfast of champions.  Ok...let's be honest, this was a breakfast of two-starving-non-morning-people-who-were-craving-IHOP-or-something-super-unhealthy.  But this totally satisfied our sinful appetites while still being pretty effin good for us!  This breakfast is sweet, savory and completely filling.  Oh and it makes A LOT too, so keep in mind you'll probably have leftovers.  But that's ok because it reheats really well and you'll get to enjoy this all over again the next day!

Here are your ingredients:
Recipe adapted from Weight Watchers

1 cup uncooked quinoa
1 Tbsp butter, divided
2 medium apples, chopped
1 1/2 cups cold water
1 tsp. cinnamon
1/2 tsp. apple pie spice
3 Tbsp packed brown sugar
1/4 cup fat-free skim milk

Soak uncooked quinoa in a bowl of water for 5 minutes.

Meanwhile, coat a large skillet with cooking spray and set over medium heat.  When skillet is hot, melt 1/2 the tablespoon of butter and add your chopped apples.  Cook about 5 to 10 minutes, until apples are soft and begin to caramelize, turning occasionally.  Set aside.

Rinse and drain quinoa.  Add to a medium saucepan with 1 1/2 cups of cold water and bring to a bowl over medium-high heat, boil for one minute.  Reduce heat to low and cover pan tightly, allowing quinoa to simmer for 10 minutes.  When quinoa is cooked, remove from heat and fluff with a fork.  {Quinoa should have a little tail that appears on each grain when done}  Add remaining 1/2 tablespoon of butter, cinnamon, apple pie spice, brown sugar and milk, stirring to combine.  Fold in apples and enjoy!

I've been obsessed with quinoa lately but I never would have thought to put it in breakfast! Did you use a specific kind of apple or do you suggest just using whatever kin of apple you prefer?

I'm going to try this out tonight for tomorrow's breakfast. I have the hardest time getting the boyfriend to eat anything healthy in the morning. It's usually a fried egg sandwich with bacon - reeeeal healthy!

Add the milk after you fluff the quinoa and add the butter :) Then stir in your cinnamon. Hope this helps!
