Blueberry Almond Crostinis

So let me just tell you how much fun it has been house shopping.  I've been in my little one bedroom apartment for about 5 years now and have been dying to have more space!

And a much bigger kitchen.

Over the past few weeks I have been in model home after model home and have decided that I'm probably the most pickiest person alive.  No really I am.  I know exactly what I want in my future home and even the most gorgeous of places is always missing something.  That's why I've decided to build new and pick everything out, plus it will be fun to capture everything in the process!

Now before you start commenting on how ridiculously picky I am....don't worry I'm fully aware.  But this is literally the most expensive purchase of my life and I don't want to just like my new home, I want to LOVE it!  This now leads into my next ridiculous obsession - Pinterest.  Folks I think I may need to go to meetings, it's that bad.

Ever since I committed myself to purchasing a home, I've been pinning ideas like a crazy person!  I now have my Pinterest page organized into each room of the house and ways I plan on decorating it.  I started off completely realistic, pinning only spaces that I knew were in my budget and that I could actually create.  Well now I find myself pinning huge gourmet kitchens with marble counter tops and designer walk-in closets!

...HELP!

And what is my with obsession with white??  I mean let's be real people...I'm 28 years old and will eventually be having kids one day.  A white living room, white kitchen and white master bedroom is NOT going to survive children.  It's just not.  Someone please come save me!

Calories: 152

Here are your ingredients:
Recipe adapted from Better Homes & Gardens

1/4 cup light ricotta cheese
1 Tbsp honey
1/2 tsp. lemon zest
3/4 cup blueberries
4 slices low-calorie whole grain bread, toasted (I used Ezekiel)
2 Tbsp sliced almonds, toasted

In a small bowl, combine ricotta cheese, honey and lemon zest.  Slowly fold in blueberries.  Cut each toasted bread slice diagonally into four equal pieces.

Divide blueberry mixture among bread pieces.  Sprinkle with toasted almonds and enjoy!

How fun! Having lived through two children and a variety of animals over the years, I'm thinking white is probably not the best idea. You'll have more than your share of fingerprints and paw prints. Our farmers markets are filled with blueberries right now. Perfect for these yummy treats. Have a good time!

Pinterest has definitely made me wanting a better or dream home. So many cool options but I keep telling myself that millionaires have these homes and not me. Well until I win the lottery.

Girl I am so excited for you! I'd be pinning left and right too if I was looking for a new house. All I can say is even with a new house, make sure you have an inspection done with it too. FAR too many construction companies are taking short cuts these days and you have the power to get all of those things fixed that a pro can spot before you do a regular walk through. Then you don't sign off until everything is corrected. Just my 2 cents, not that you asked for it! HA!

Now, off to plan on some crustini action! :)

I totally don't blame you about being picky. A home is a huge investment and you should totally love it! And even I have Pinterest boards with my dream home ideas... and I'm about a million years away from owning a house.

You're supposed to be picky when buying a home.. :)it took us 2 years from start to move in (we built our house) and I drove my husband crazy.. so it's ok.. Can't wait to see your progress along the way.. And anything with blueberries is a winner in my book.. These look incredible!

1. I totally understand the picky thing. I mean, when you're forking out that much money, you have every right to be picky!
2. Pinning things out of your budget is a great idea because that's where you can get your inspiration. I've seen tons of people make their homes look fabulous off of mimicking crazy expensive homes when they're on a tight budget. Totally legitimate. :)
3. I understand the white, I don't have kids either right now and totally love the white. I'm trying to think of what I could do when I have kids...and a house of course! haha Minor detail...

Yeah if your having kids you better abolish white from your life for about 20 years lol! White and kids are like caviar and twinkies, so far from each other. I do love your crostinis though, what an awesome idea! Good luck house hunting, my advice..take your time and see as many as you can, you'll know the right one when it hits you :)

Mmm...ricotta, honey and blueberries sounds great together. congrats on the decision to buy a new home and I can't wait to see all the photos.
