I’m Steph and I blog at Steph’s Bite by Bite…you might remember me from a post I did a while ago on Miss Kelly’s blog that involved peanut butter, bananas, and chocolate. Well I’m back to share another great, easy recipe, but this one is totally for those die hard summer lovers.
And when I say summer lover I mean “Summer Loving Had Me a Blast” kinda love. Where your day is filled with cool drinks, lots of back porch relaxin’, maybe a few tiki torches, and definitely some huge slices of thick, juicy, black seed studded watermelon!
Summer is not summer without watermelon.
But just eating it by the slice and spitting the seeds can get kind of blah. So to change up your summery watermelon intake I turned that fruit in to a salad!
Yes skinny girls! We’re totally sticking to the name of the blog and eating TONS of watermelon to keep those sexy curves and hawt bodies! We’re eating ourselves skinny.
…and trust me…when you start eating this salad you will not want to stop!
Mint, watermelon, feta. A summery fruit salad that seems so bad, but is so SO good!
makes enough for two or three people
1/2 a medium sized watermelon, cubed (seeds removed)
1 scallion spring, sliced
2 springs of mint, roughly chopped
1 teaspoons apple cider vinegar
Juice of 1 lime
1 teaspoon honey
1/4 cup feta cheese
In a bowl combine watermelon, scallion, and mint, stirring to combine. In a separate small bowl, whisk together lime juice, apple cider vinegar, and honey. Pour over top of watermelon. Add in the feta and stir well to combine all ingredients. Serve immediately or refrigerate until ready to eat.
