Spinach and Egg White Omelet

Ok so I know this is a day behind, but....

My apologies to those who are completely clueless, but I'm just a little obsessed with The Bachelorette.  Emily (in my opinion) is the sweetest, most gorgeous and down to earth girl in Bachelorette history...I was fan ever since Brad's season.  Sure I was upset she didn't pick Sean, but she handled every situation with grace and class, even when it was undeserved *cough cough Kalon*

I seriously had the utmost respect for her when she chose to only introduce Jef to her daughter Ricki and went ahead and sent Arie home early, rather than dragging out the date.  She was genuinely crushed knowing that she would be breaking his heart, and it made me love her even more!

Oh and isn't Jef just the cutest???
I really love them together.

And yes, this would be an egg white omelet with spinach and tomatoes.  Uber healthy, totally delicious and probably the easiest thing you'll ever make in your kitchen.  For reals.  I'm doing by best to stay on the clean eating track, and like I said before, I'm really loving it!  This is something I make almost every morning and no I don't add cheese, but feel free to throw some in yours if you feel so inclined.

Best part is, this entire omelet is only 1 WW point!
High in protein, low in carbs and completely fat-free...it's literally the best thing you could start your morning off with.

Serving Size: 1 omelet
Calories: 70
Fat: 0 g
Carbs: 3.7 g
Fiber: 1 g
Protein: 11.7 g

Here are your ingredients:
Recipe inspired by Bargain Blonde and Skinnytaste

3 egg whites
Handful of spinach (about 1/2 cup)
1/2 cup onion
4 or 5 grape tomatoes
Salt and pepper, to taste

Preheat the oven to 400 degrees F.  Spray a medium skillet with cooking spray and saute your chopped onion for 3 to 4 minutes, until translucent.  Add your spinach and saute until just wilted.  

Place spinach-onion mixture in a small glass dish (or you can use a small skillet) and crack 3 egg whites over top.  Season with a bit of salt and pepper, add sliced tomatoes and bake in oven for 17 minutes.  Serve with fresh fruit and enjoy!

I just made this for breakfast, and it was very tasty. As soon as I put it in the oven I realized that some fresh basil would be a awesome addition to it. Next time for sure!

Ok so i make this every morning, just minus the onions & with some feta added. AND i am totally girl-crushing on Emily...she is totally amazing and i want to be BFFs with her!! She handled the entire season SO gracefully and is just so full of class! So sinceyou & i are basically thesame person, i votethat we should be BFFs too ;). Just a thought

I also so rooting for Sean but Jeff was my second choice for sure. And yes, she is adorable. I made the switch to clean eating about six months ago and am loving it. I never though I could afford to eat this way, but with shopping sales and price matching at Walmart, it's very affordable and we are reaping the benefits.
