Raspberry Mint Mojitos

Ok so I know its Monday,
but it's never too early in the week for a cocktail.

Or two.

And I'm going to just be completely honest.  I have absolutely nothing to write about.  My weekend was you know, just okay...nothing exciting, but nothing too terribly boring.  I'm sitting here, on a Monday morning, just staring at my computer screen.  I'm thinking I need some serious retail therapy, I need to finally make that hair appointment because my roots are starting to become my new hair color, I need to finish paying my bills (because you know that's what adults do) and I MUST stick to my new clean eating diet plan.

Wow so when did this boring-I-have-absolutely-nothing-to-write-about post turn into an all out venting sesh?

My apologies, but hey, least I made you a cocktail!

On another note, let's discuss this much-needed retail therapy, shall we?  I currently already have this, this and yes definitely THIS in my shopping cart to purchase.  You can never have enough sundresses in your closet for the summer and since its only July, I still have a lot of time left to enjoy these...at least that's my justification.

Pretty well-founded if I do say so myself.

Now how about I give you that recipe for these delicious mojitos,

Servings: 1
Serving Size: 1 mojito
Calories: 117
Fat: 0 g
Carbs: 2 g
Fiber: 1.2 g
Protein: 0.2 g
Points+: 4 pts
______________________________
 
Here are your ingredients:
Recipe adapted from Betty Crocker 
 
6 or 7 fresh raspberries
4 fresh mint leaves
1 Tbsp lime juice
1 packet Stevia in the Raw
Ice cubes
3 Tbsp rum
2/3 cup club soda
 
Place raspberries, mint leaves, lime juice and sweetener in the bottom of your glass.  Muddle together so that all your raspberries and mint leaves are crushed, top with ice and pour in your rum and club soda.  Add a few additional mint leaves and raspberries if desired; garnish with a lime peel.  Enjoy!

I have just recently fallen (back in) love with mojitos! I forgot how delicious they are! It's a bummer that it's fall now, but hey! I can pretend that I'm on a beach somewhere drinking this delicious drink... right?!
