Yes folks, I'm finally posting a recipe.
If I were to say that these have been an easy past few weeks I'd be severely lying. I'm sure most of you read my most recent post about having a biopsy last week for skin cancer and lemme tell you...waiting for the results have been absolutely grueling. And if the doc couldn't make things any worse, he informed me that if the biopsy comes back negative then they'd just shoot me a quick email letting me know I'm in the clear, if it's positive then I'd be receiving a phone call to discuss what my next steps would be.
Well the phone rang.
Yes unfortunately my biopsy came back positive for abnormal cells and lets just say my heart completely dropped. This isn't supposed to be happening to me...at 28 years old...at the beginning of what I was hoping to be the best summer ever. But I truly believe all things happen for a reason and the doctor told me that I was extremely lucky this was caught very early.
I'm scheduled for more surgery next week and they are hopeful they'll be able to remove everything without any future problems. All I can think is how grateful I am that my foot got slammed into the door and I ended up in the emergency room, otherwise I probably would have never noticed this spot on my leg.
God truly does move in mysterious ways.
The emails I've received since sharing with you all my experience last week have been absolutely tremendous, I can't even begin to explain how much they all have meant to me. Some shared with me their personal struggles with skin cancer while others sent me the sweetest messages wishing me well. I know I haven't been able to respond to them all yet, but I promise you I will!
But aside from all this madness, I was able to enjoy a wonderful weekend up in New York at our friend's wedding. The weather was gorgeous and the wedding couldn't have been more beautiful!
Here are a few snippets from our weekend.
Now here's the most simple recipe you'll ever make that is just perfect for parties or fun events!

Serving Size: 3 skewers
Calories: 58
Fat: 3.7 g
Carbs: 3.0 g
Fiber: 0.7 g
Protein: 3.5 g
Old Points: 1.3 pts
Points+: 2 pts

30 cherry tomatoes
30 mozzarella balls, patted dry with a paper towel
Basil leaves
Pepper
Balsamic vinegar
Using 6-inch bamboo skewers, first place a cherry tomato, then a large basil leaf followed by a mozzarella ball. Continue these steps until you have the amount of skewers you want, arrange them on a platter and sprinkle with a bit of pepper. Serve with balsamic vinegar or drizzle over top, just remember to drizzle right before serving so that your basil leaves don't wilt. Enjoy!

Being 65 I've been throught the skin cancer stuff..several times..luckily, none of the BAD skin cancers..only the very slow growing, easily removed "stuff". But any suggestion of the C word is scary..every time! Love this anti-pasta plate..SOOOOO easy, and obviously yummy! Have a great summer..it doesn't have to be anything else. The surgery is minimal and just slather on lots of sunblock!!!!!

I'm so sorry the phone rang but like you said, God works in mysterious ways so be thankful it was caught when it's treatable and not spread. I don't know if you use a self tanner or not but L'oreal Sublime's products have produced a tan that looks exactly like yours so you can still have that "glow". Just make sure you slather on the sunscreen because using it can make you more susceptible to sunburns if you don't. A good 55 SPF with UVA/UVB protection will do the trick!

Hey girl! I'm so sorry to hear of your skin cancer. And unfortunately I can relate. In March 2010, at 24 years old, I was diagnosed with basal cell carcinoma on my nose. I had to get the size of a dime removed and I now have a 15 stitch scar in the shape of a B on the right side of my nose. It is SO scary to go through and I hope that your surgery goes well! I'm so sorry to hear this.. You'll be JUST fine girl. Just be incredibly strong because I find that when you just carry on with your fine self when going through something like this... all the negative sort of gets washed away. :) I know that sounded incredibly dorky but it's the truth!!!!!!! :)

Those skewers look amazing!! Just wanted to tell you that I had positive test results last month for atypical skin cells. I had two spots removed in a quick and painless procedure. I was scared, but looking back it really wasn't that bad. Wishing you the best of luck with your surgery!
I, too, was diagnosed with melanoma - Stage 1 two years ago. Life changing experience. It's hard because I always had an outdoors lifestyle as I have horses. I never was one to lay in the sun or tan but didn't use sunscreen.

I am sooo sorry about what you're going through! My dad actually just had a skin cancer spot removed from his face and now I am soo paranoid about being in the sun. 1. Caprese skewers are the best & these look fab.
2. You are so not alone on this skin cancer thing. Last year, at my pre-wedding dermatology appointment, I asked my doctor about a suspicious spot on my chest. She freaked out, biopsied it & of course, it was cancer. Luckily for me, just basal cell carcinoma, but cancer nonetheless. A former tanorexic, sun worshipper, etc. I felt like a fool. I lucked out that it wasn't more serious but it really makes me think each time I step out into the sun or even think about jumping in a tanning bed for a nanosecond. Good luck to you, girl!

So glad you are back Kelly! I have missed you and your recipes! Just had 2 Basal Cells removed...one on my nose and one on my back. My husband also had a pre cell removed from his chest. Sun is no joke! Use that sunscreen girl! Prayers going up for you :)

So crazy because I had these exact tomato kebabs on my mind for weeks now! Yours came out beautifully.
We took my dog into the vet because he ate some cat litter and was throwing up. They took some blood to be safe and we found out his liver was about 2/3 full of masses. He's been on chemo ever since and 2 years later he's doing quite well! I hope everything turns out ok with you!! The world does work in mysterious ways...

Like I said in a previous post, I was diagnosed with stage III melanoma at age 23 after years of sunbathing and using tanning beds. Now I'm determined to save others from this. It's definitely not "just" skin cancer.
