HAPPY BIRTHDAY TO MOI!!!
Yes I'm officially 28 today
and I'm still not sure how I feel about it all.
Okay so the 30's might be considered the new 20's (least that's what I tell myself), but I'm still not excited on the whole idea of getting yet another year older! I'll no longer be considered a "young adult", I may have to retire my unhealthy shopping sprees at Forever 21 and, worst of all, I won't be able to call myself a "20-something" anymore!
Major crisis!
Alright so clearly I'm over-exaggerating (just a tad), but least I have two more years of 20-something bliss where I can live it up without a single worry in the world.
Until I get married.
And have babies.
crap.
So lets focus on the real issue at hand. I made curd for the first time...and actually liked it! I don't know about you but the word "curd" sounds anything but appealing and to be honest I really didn't know what it was until I saw this recipe in my Cooking Light magazine. Ohh it does not disappoint people! It tasted like a cross between yogurt and pudding with a fluffiness that reminded me of whip cream. Seriously what's NOT to love??
The granola topping gave this the perfect added crunch, but feel free to try crumbled graham crackers or vanilla wafers if you'd like. And as you know from yesterday's post, fruit is in high abundance right now and just looks beautiful! Top it off with a sprig of mint and you've got the perfect sweet treat to impress your guests for brunch.

Here are your ingredients:
Recipe adapted from Cooking Light
2/3 cup sugar
1/2 cup fresh lemon juice
1/4 cup fresh orange juice
1/8 tsp. salt
6 large egg yolks
3 Tbsp light butter, cut into small pieces
2 tsp. grated lemon zest
1 1/2 cups blueberries
1 1/2 cups raspberries
3 Tbsp granola (I used Special K low-fat granola)
In a small saucepan over medium heat, combine sugar, lemon juice, orange juice, salt and egg yolks. Stir constantly with a whisk for about 6 minutes until mixture is thick; remove from heat. Add butter and lemon zest and continue to stir until butter is melted. Pour the mixture into a bowl, cover with plastic wrap and place in the fridge until cooled completely.
Once chilled, spoon 2 tablespoons of curd into 8 small cups (or 2 large dishes if so desired), followed by a layer of blueberries and raspberries. Repeat these layers and top with granola, berries and a tiny sprig of mint. Enjoy!

This blend of curd and berries does look delicious and I love the additional crunch of the granola. Also, this reminds me that my free subscription to Cooking light is coming to an end. Great magazine, so I do need to renew. Have a great day!

Hi and Happy Birthday! Your photos are beautiful. I posted a strawberry and orange curd recipe on my blog a couple of weeks ago and wrestled with changing the name because it sounds so unappealing for something so yummy. Your lemon curd looks fab. Enjoy your blog!

Happy Birthday! Love this stunning dessert too!
First off, Happy Belated Birthday! I too turned 28 just last month and felt the same way you do... getting closer to 30 sucks. And to boot I'm already married so people won't stop pestering me about babies--I want to hold on to my carefree life as long as I can! On a food note--I too have yet to make a curd--the word just scares me. Your pictures look fabulous and oh-so intriguing that I might just have to try to make some curd!
HAPPY BIRTHDAY!
Happy Birthday my friend! Hope you have a fantastic one! xo
Happy Birthday! Don't stress about the late 20s/early 30s. I am finding that these years are awesome because you're finally an adult but don't have the full plate of adult responsibility yet. Beautiful recipe!
Hope you had a fabulous birthday, Kelly! xoxo
Happy Birthday, again!! :) Those pics are amazing! You are so beautiful! AND your pics are amazing!! Seriously Kelly, really really beautiful!

I can’t believe you can make the healthy version of Lemon Curd with Mixed Berries!
Can I post this Lemon Curd with Mixed Berries photos on a food photography website called http://www.foodporn.net to make others live in a healthier way? :)
Please let me know if it’s okay.
Thank you.
Happy Birthday! Those photos are just too cute :) It's hard not to miss those days as the years keep flying by. But on a brighter note, the lemon curd looks beautiful. Yum!
Hope you had a Happy Birthday!! This looks so pretty!

Hi Kelly,
I just found your blog and I wanted to say Happy Belated. My birthday is May 14th, and I just love finding fellow May Babies. Also, I live in Northern VA and thought I'd say hi since you seem to be close by as well. Have a great evening!
(this might be a duplicate so if it is I apologize)
