Usually I'm pretty picky and very simple.
But how can you deny pita, mint and cucumber??

Oh and did I mention crumbled feta cheese?? That's right folks, Trader Joe's style. Their light version is almost half the calories and fat with the same great taste! This salad is absolutely the easiest thing to whip together and will literally feed your entire family...and then some. I suggest you put the salad together ahead of time, allowing everything to marinate together increasing the flavor and then toss in the mint, watercress and feta cheese right before serving.

Feel free to throw some romaine lettuce in this dish too! You really can make this salad all your own, I promise there are no rules. I'm huge fan of really crisp salads, not ones that go all wilty the second you throw some dressing on them. And the great thing is the leftovers stay fairly crisp if you want to bring your salad to work the next day! One suggestion would be to save a few of the baked pita squares and throw them in a baggy to take with you so they don't get soggy overnight.
And at 4 points a serving, go ahead and pile up your plate!

Here are your ingredients:
Recipe adapted from Martha Stewart
2 small pita breads (cut into 1-inch squares)
3 Tbsp white wine vinegar
1/4 cup extra-virgin olive oil
Salt, to taste
3 stalks celery, cut into 1/2-inch dice
1 cucumber, peeled, seeded, and cut into 1/2-inch dice
1 bunch fresh mint, trimmed and thinly sliced
1/2 bunch watercress, trimmed
6 oz. light feta cheese, crumbled (I found this at Trader Joes)
Pepper, to taste
Preheat oven to 350 degrees F. Spread pita squares on a baking sheet and bake until they are nice and crisp, about 15 to 20 minutes. Remove from oven. Meanwhile, in a small bowl, whisk together vinegar and olive oil, and season with salt.
In a medium salad bowl, combine toasted pita bread, celery and cucumber. Add vinegar mixture, and toss well to combine. Just before serving, add mint and watercress and gently toss again. Sprinkle feta cheese over the top and season with pepper. Enjoy!

A few of the Mediterranean take out places around here offer versions of this (fattoosh) salad but their pita chips are always soggy. Much better to make your own and your tip about bringing the pita in a separate baggie is great.

Oh yes, TJ's reduced feta is always in our fridge, it really does taste great! Oh, and I also discovered their pita chips with sea salt are a wonderful alternative to croutons!

Trader Joe's also makes a fat free Feta that is delicious. And I just read another commenter's post about adding Trader Joe's pita chips to your salad instead of croutons. Genius! What a great way to make your salad a little more substantial.

I like this recipe, but it seems to have way too much vinegar in it. I think next time I make it I'll cut it down a bunch. Otherwise this is a great recipe!
brilliant recipe! it was a refreshing hit on this hot summers day :D the only thing i would change is to add the pita in last as the dressing made it soggy :)
