If you’re a Pinterest addict like I am then you probably saw these Diet Coke brownies pinned ALL over your wall.  After the 7562936592194 time seeing them, I decided to go ahead and finally make the stupid things.
Stupid wouldn’t even begin to describe these!

These brownies turned out SO fantastic and the taste wasn’t altered one bit!  They were super moist and incredibly easy to make.  No eggs, no oil.  Just two ingredients, less than 5 minutes of prep and voila!  You’ve got yourself some skinny-mini brownies!
My next task is to try them with the No Pudge Fudge mix I love so much and cut calories even more!!  But for these, I wanted to lighten up an indulgent recipe and see how they’d turn out.  I was pleasantly surprised.

For these brownies, all you need to do is combine one 12 oz. can of diet coke with one package of brownie mix and follow the directions on the back of the box.  Easy peasy!  I did find that the baking time needed an additional 5 to 10 minutes (depending on your oven) for a toothpick to come out clean.Now let me just clarify friends, I do NOT condone eating chocolate all the time!  I’ve had a few not-so-nice-comments on my sweet desserts saying this is supposed to be a “healthy” blog…and it IS!  But this is just a fun alternative to the full-fat brownies people typically make.  I’m not a nutritionist and I certainly don’t claim to have all the answers when it comes to eating healthy.  I created this blog simply to share my favorite recipes with you all and although I try to eat healthy 90% of the time, sometimes a girl just needs to indulge.

Ok enough of my rant.
Onto the good stuff.

Diet Coke Brownies

Yield: 18 brownies

Ingredients

  • 1 box Betty Crocker Low-Fat Fudge Brownie mix
  • 1 (12 oz) can Diet Coke

Instructions

  1. Pour brownie mix into a medium-sized bowl and pour in your 12 oz. can of diet coke. Using a hand held mixer or whisk, combine ingredients until you see no more lumps.
  2. Pour mixture into a 9 x 9-inch pan coated with cooking spray and bake according to the package directions, adding an additional 5 to 10 minutes to the baking time.
  3. Your brownies should bake for about 40 to 45 minutes, or until a toothpick inserted comes out clean. Allow to cool for about 5 minutes and enjoy!
