Diet Coke Brownies

So what do you get
when you mix the following??


Um only the greatest thing ever.
And did I mention only 115 calories??
You're welcome.

If you're a Pinterest addict like I am then you probably saw these Diet Coke brownies pinned ALL over your wall.  After the 7562936592194 time seeing them, I decided to go ahead and finally make the stupid things.

Stupid wouldn't even begin to describe these!

These brownies turned out SO fantastic and the taste wasn't altered one bit!  They were super moist and incredibly easy to make.  No eggs, no oil.  Just two ingredients, less than 5 minutes of prep and voila!  You've got yourself some skinny-mini brownies!

My next task is to try them with the No Pudge Fudge mix I love so much and cut calories even more!!  But for these, I wanted to lighten up an indulgent recipe and see how they'd turn out.  I was pleasantly surprised.

For these brownies, all you need to do is combine one 12 oz. can of diet coke with one package of brownie mix and follow the directions on the back of the box.  Easy peasy!  I did find that the baking time needed an additional 5 to 10 minutes (depending on your oven) for a toothpick to come out clean.

Now let me just clarify friends, I do NOT condone eating chocolate all the time!  I've had a few not-so-nice-comments on my sweet desserts saying this is supposed to be a "healthy" blog...and it IS!  But this is just a fun alternative to the full-fat brownies people typically make.  I'm not a nutritionist and I certainly don't claim to have all the answers when it comes to eating healthy.  I created this blog simply to share my favorite recipes with you all and although I try to eat healthy 90% of the time, sometimes a girl just needs to indulge.

Here are your ingredients:
Recipe adapted from Every Mile a Memory 

1 box Betty Crocker Low-Fat Fudge Brownie mix
1 (12 oz) can Diet Coke

Pour brownie mix into a medium-sized bowl and pour in your 12 oz. can of diet coke.  Using a hand held mixer or whisk, combine ingredients until you see no more lumps.  Pour mixture into a 9 x 9-inch pan coated with cooking spray and bake according to the package directions, adding an additional 5 to 10 minutes to the baking time.  Your brownies should bake for about 40 to 45 minutes, or until a toothpick inserted comes out clean.  Allow to cool for about 5 minutes and enjoy!

I've been making these for YEARS! And they are so fantastic. It works with pretty much any baking mix. Diet Coke + Spice Cake = awesome.

It also works for single servings in the microwave. Just mix a tablespoon or so of baking mix with a similar amount of Diet Coke and microwave for one minute.

Too bad these would have aspertame in them from the Diet Coke. There is nothing healthy about any kind of soda. I would rather use all natural applesauce & whole wheat flour & make brownies from scratch.

When I was doing weight watchers a million yrs ago...I had these! Ok and then we tried them with different flavors!! Like cherry coke with brownie mix, or orange soda with vanilla...just sayin! :)

I'm sure that these brownies get gobbled up pretty quickly, but in your experience, how do they keep? I only ask because when making cake or cupcakes with low fat cake mix and a can of pumpkin I've found that they don't keep very well. They're excellent the first and second days, but after that the texture sort of breaks down. They end up getting gummy and kind of gross. Have you experienced this at all?

OMG I need to make these ASAP. And those people complaining about this healthy blog having desserts? They can shut it. Eating healthy does not mean totally taking all food out of your diet. Everything in moderation.

Good lord, chocolate can be perfectly healthy to eat every day depending on what you eat and how much of it. I'm more worried about the diet soda pop frankly in terms of what it might be doing to my body.

There is nothing wrong with having desserts on a healthy eating blog. What I don't understand is why anyone would want to replace oil and eggs with diet coke, which is SO harmful for your body. Rather than making healthy brownie mix from scratch you are using the same sugary brownie mix, just adding unnecessary artificial sweetene and other ingredients that will decrease your health in the long run. If you really want to make brownie mix healthier, use egg whites only and try an alternative to vegetable oil, such as coconut oil.

I've been reading so many bloggers lately talking about negative comments on their posts and it just baffles me. I'm not a big fan of box mixes and artificial ingredients but that's my business. I do believe in a balanced life and that includes healthy eating, exercise, an occasional cocktail AND desserts. But I don't get who anyone thinks they are to tell you what to do, eat or post. As I told another blogger, that's what the delete button is for. :)

I tried these last night but with Coke Zero and I had two problems: 1) the top had a thin, crunchy "crust" (not BAD, just unexpected) and 2) the consistency was a little rubbery. Don't know what I did differently...They were ok, but just didn't rock my socks off.

For anyone not into the Diet Coke you can try Zevia soda, it's sweetened with stevia. I love the strawberry flavored Zevia, I think that could be really good with white cake mix!

I saw these on Dinners, Dishes and Desserts as well. I tried it with root beer instead and for some reason my batter came out more like cake batter than brownie batter and ended up requiring an hour to bake and resulted in more of a cake bar than a brownie density. I still thought they tasted awesome but was confused why I got such different results. I used 12 oz too!

Alright, this recipe is in my oven as I write. However, I only had Cherry Coke Zero, so I'm trying it. No sodium, and not sure what else is missing, so they might not turn out. Fingers crossed!

What did I do wrong? I just tried making these and was so excited, but they just didn't turn out right. Instead of using a 12 ounce can, I measured 12 ounces out of the bottle. Could that have made the difference? They took over an hour to bake, were very rubbery and did not form. Did anyone else have a problem when they measured 12 ounces instead of using a 12 oz can?

My brownies turned out, but I didn't use a 9x9 pan, I used a different size, but I think this time I'll use a 9x13 & see if they don't set better. Cherry Coke Zero seemed to work, though. Just a bit more gooey in the middle, and yet the outside was done. Maybe I need to adjust the temp of the oven?

I'm making these right now... I was thinking if I make these again I might use 3/4ths of the can instead of a whole can. The batter was super runny! Also I got the regular fudge brownie mix instead of the low fat because interestingly enough when I compared the calories the regular fudge mix had a lower calorie and lower fat content when comparing just the mix nutrition info. It wasn't until it was prepared that the low fat brownie mix had less calories and fat and since I wasn't using the same preparing ingredients just the mix I figured I was actually saving calories by using the regular version vs the low fat version.

I just made these with Giant Eagle (my local grocery store in PA - not sure where they are) Black Cherry Fruition. It's flavored sparkling water. I didn't have anything else carbonated in the house.

AMAZING.

Seriously the best brownies I have ever made. I tried a 'no pudge brownies' recipe online yesterday, and they were the most disgusting things I have ever created. Hard as a rock and the flavor was not good.

I used just 1 cup and whisked it with Duncan Hines Fudge Brownie mix at 350 degrees. I checked it after 26 minutes, and the batter was still liquid. I ended up taking it out after 7 more minutes. The texture is amazing. I personally think I can taste the black cherry flavor, but no one else is awake (yes, I am baking at midnight) to try them yet.

Very skeptical about the substitute since some substitutes come out with very different results than the original recipe, but this was AMAZING!

Just made these-because of some comments I tweaked it a little. I used one box of regular brownie mix, (the 13x9 size,) 1cup of diet soda, and 1/4 c. Egg Beaters. I mixed for the recommended 50 strokes and baked them in a 13x9 pan according to the directions on the box (about 30 mins on 350). They came out beautiful and cake-like. My brownie-snob husband agreed that they are yum.

I couldn't find the low fat brownie mix so we used regular. These were DELICIOUS!! On accident we didn't get the middle cooked all the way but it was a delicious mistake. It was like the molten lava cake from Chili's!! ABSOLUTELY WONDERFUL! They were devoured in minutes!

I couldn't find reduced fat or fat free brownie mix so I chose No Pudge. I added 12 oz of diet coke to the brownie mix and popped it in the oven at 350 degrees for 30 minutes. They weren't terrible but they weren't that exciting. Definitely better than I thought they'd be!

I tried this because I had done the same thing with cake mix (using diet sprite, based on a Weight Watchers tip). My brownies did not come out right, they were still pretty liquid on the bottom. However, I didn't add any additional baking time, so I'll have to try it again. Thanks for the tip!
