Herb Crusted Pork Chops

Whoever said running was easy is a damn liar!

Seriously I commend you devoted runners who are out every day running 10 plus miles like it's nothin but a thang....

Bite me.

As you know I signed up for about 3 races, completely motivated and ready to get my bootay in shape, and lemme tell you....

I. am. struggggggggling.

I mean look, I'm not out of shape!  I'll kick an elliptical's ass any day of the week or even kill a spin class or two, but running?  We seem to have a love/hate relationship these days and really...I am trying.  Then of course there is my boyfriend who hasn't ran in years, decides last week he wants to start and without hesitation or struggle, runs a 3 miler!

WTF?!

Yes I'm just convinced it's not my thing, BUT I'm always up for a challenge and I'm bound and determined to make running my bitch.  Unfortunately the 5k I was signed up for last weekend was cancelled due to thunderstorms so I was off the hook completely devastated of course.

Wink.

My next race is a 15k on April 22nd and this one I'm terrrrified about, BUT I am training and I WILL be prepared!  In the meantime, I've been eating super healthy and have just been loading up on tons of fruits and veggies, smoothies in the morning and tons of greens throughout the day.  I haven't been able to cut chicken or fish from my diet, but I have cut out bread and pasta.

I know...HUGE sacrifice.

But I feel amazing and that's all that matters!  As someone had asked before, I'll give y'all a post soon sharing my daily meal plan as well as my current workout regime.  Everyone is different, but this works for me!

Oh yeah, and I made you some yummy pork chops.

Servings: 4
Serving Size: 1 boneless pork chop
Calories: 210
Fat: 9.4 g
Carbs: 5.1 g
Fiber: 0.3 g
Protein: 24.5 g
Old Points: 4.9 pts
Points+: 5 pts

Here are your ingredients:
Recipe adapted from Cooking Light

4 boneless pork chops, fat trimmed
2 Tbsp Dijon mustard
1/2 cup whole wheat Panko breadcrumbs
1 Tbsp fresh thyme, chopped
1 Tbsp fresh parsley, minced
1/8 tsp. salt
1/8 tsp. ground black pepper
1 Tbsp extra-virgin olive oil

Preheat oven to 450 degrees F.  Rub mustard evenly over pork chops.  Combine panko, thyme, parsley, salt and pepper in a large bowl and dredge pork chops in panko mixture.

Heat a large ovenproof skillet over medium-high heat.  Add oil to pan and swirl to coat.  Add pork chops, saute for 2 minutes or until golden brown.  Turn pork over and place skillet in oven for about 8 minutes or until pork reaches 145 degrees in the center.  Enjoy!

You could always choose to make this recipe by using a pork tenderloin and slicing it into medallions.  That should yield about two medallions per serving and would feed more people.  I chose to be cost-effective and just pick up a tiny package of boneless pork chops since I was feeding just two of us.  You can't go wrong either way!  Just make sure to trim off all the fat and you've got yourself a delicious piece of lean meat for your meal!

just a side note though.. why would you want to cut out chicken & fish from your diet?? I thought eating proteins and fish was good for you?
or does it have something to do with running??

i also thought that eating carbs before running a marathon was encouraged.

Oh dear - you are so not alone. I used to run on a semi-regular basis and then it got hot outside and seriously. When it is 80 degrees at 5 a.m. who in the world wants to realistically run? So the hubs and I have started again and I dread it every day but I always feel so much better afterwards that it is usually all I focus on to get through it. Although, coming home to these delicious treats might not hurt either! :)

You do bake them :) Just in the skillet that you sear them in first, it's a great way to give the edges a nice crisp while baking ensures they are cooked completely through!

You get used to running -- then it becomes so much a part of you, you can't stop, even when it's hard :) As for the guys not running in years and then suddenly getting up and racing as if that's what they've been doing all their life... I know exactly what you mean! It's the same here with the hubby.

Seriously...I'm so glad I'm not the only person who CAN'T run!!! I could go for hours in the elliptical I think, or any number of classes, but more than 30 seconds of running nearly kills me. Maybe it's the jarring of hitting the ground? I don't know. Maybe I'm not doing something correctly! haha If you figure out how to "become" a runner, please do share :)

I give you credit, I hate running. I try, I do it, but I don't like it. It bores me. I thought I'll try a half marathon or something, but forget it, I know I won't be able to train for it.

I can't wait till you post what kind of meals your eating. Cutting out bread and pasta, thats gotta be tough and probably something that I should do. Do you still eat a grain or did you basically cut that out to? Great post today, you are an inspiration!

Hal is great! and keep on running you'll find that "special pace" (bad runners joke) and you'll own it! PS Thanks for the great recipes, I've tried several with success.

Good for you for signing up for 3 races! I ran my first 10k last year and I had to train for months and let me tell you, it does get easier :) And those pork chops look deliciousss! I'm adding them to my list because lately I've been struggling to find healthy meals that are actually enjoyable to eat.

I have a love hate relationship with running too! I kind of suck and am slow, but I have done 2 half marathons. Moving the CO has sucked to adjust to altitude, and am I really struggling to get the little speed I had back. But it is so good for you!!

Love pork chops too, we ate a lot of them here!

Running totally kicks my butt! I have a hate/hate relationship with running. Hats off to you because I could never find my grove and it drove me nuts!!! Needless to say I totally admire runners and my dad being a marathon runner gave me every tip under the sun it just didn't work out. I broke up with running and have never looked back lol. The pork chops look delicious and super healthy. YUM!

girl, these chops look amazing! good job on running. i am not a natural runner either, but the more you push through, the easier it gets. after you run a 15K, go run a 5K an you will feel like a running master!

Its perfectly normally to hate running. I'm a certified athletic trainer and working on finishing up getting my masters in exercise science but i hate it too.
Many people do it simply because they are forcing themselves to exercise...much like any type of cardio equip.

Not to be the biggest Debby Downer ever but due to a stroke in Feb.this year I lost my whole left side. Now thru lots of PT & OT I can walk (w/a cane) & have almost full use of my arm & hand. So when you don't feel like running do it anyway & don't take it for granted! BTW I will be trying the pork chops they look great thanks.

We made this tonight and they were great. Just one question--is there a way I could add more flavor? For herbs, I had to use what I had on hand--dried thyme and fresh rosemary. Do you think this was the problem? I noticed someone mentioned garlic--dry or fresh? What else could I add for more flavor?

I have horrible luck with breading meat. The breading always ends up falling off as soon as I flip it over. What is the trick? What am I missing? Will a few minutes in the skillet help fix this?
