Thai Peanut Noodles with Chicken

So it is officially that time again, Secret Recipe Club time!!  This month I had the pleasure of receiving the fabulous blog Kate's Kitchen and lemme tell you, there were SO many delicious recipes that it was hard to choose just one!  Well after printing out a bunch of different ones {that I will definitely be making in the near future} I finally narrowed it down to these delicious Thai Peanut Noodles!

DSC_1637

One of my all-time favorite salads EVER, literally on the face of this Earth, is one with spicy peanut noodles, so when I saw this I just knew I had to make it!  I did modify this recipe just a bit by using soba noodles instead of regular spaghetti since soba noodles are only 3 points per serving as opposed to 5.  I also omitted a lot of the oil in order to cut calories as well as the peanuts since, well, Chris just doesn't really care for them.  I threw in some sesame seeds too as a fun garnish since I thought they just went really well with the overall dish!

This recipe turned out amazing and I was really pleased with how it tasted!  The combination of soy sauce, lime juice and peanut butter was fantastic and the brown sugar added the perfect sweetness.  Screw takeout, this takes little to no time at all and cuts over half the calories from any place you'd end up ordering from!

DSC_1629

I should probably also note that I did substitute the brown sugar for Splenda brown sugar blend to cut some additional calories, but thought that it still tasted fabulous!  Total fan of cutting calories anytime it's possible, especially on indulgent dishes.

And don't even get me started on my chopstick debacle.

When I had picked this recipe to make, I KNEW I wanted to display chopsticks in my photo because duh, it's the best way to eat Thai food {and sushi}.  Well who knew that finding nice chopsticks would become my weekend mission?!  I had assumed they could be found at Bed, Bath and Beyond, or any other home goods type store for that matter, but after 5 different stores with absolutely no success, I finally just went into my local takeout place and sheepishly asked for their free chopsticks.

Yeah you know the kind that comes in the plastic wrap that you break apart to use.

Yep those ones.

DSC_1640

I had contemplated offering to buy their super fancy ones from the sushi bar, but chickened out at the last minute and didn't really want to look that desperate.  Sigh.  Alas, you should appreciate the chopsticks you see before you as they clearly are the most important aspect in this dish.

I kid I kid.

Those noodles sound so, so good! We got really nice chopsticks for our wedding, and I cannot use them. The husband has the technique down, but I still need to work on it. :) I wonder if I could make this dish using spaghetti squash - just to cut a few carbs. We'll see!

Great low cal version of one of my favorite dishes. I'll definitely have to try that splenda brown sugar blend. Good idea!

Laura @ Sprint 2 the Table said...

Lovely lightened up version of this. I often cut oil in recipes - you just don't need it all! How do you like the reduced fat PB? I've never tried it, but I do use peanut flour a lot.

I'd love to make this with baked or grilled tofu to veggie-tize it.

Shannah @ Just Us Four said...

Wow, this sounds so good. I wish I could reach through my computer screen and grab that for my dinner tonight!

Liv said...

I made this tonight because I magically had most of the ingredients on hand, and it was amaaaaazingly delish and easy! Husband and I don't eat meat, so we made a few alterations (stirfried some noodles and veggies and mixed it all together) and there are no leftovers. I've been reading your blog forever and this is the first time I've actually made something I've seen here (not because I don't want to make every single vegetarian recipe you post...it just hasn't happened!). So thanks for this and it was really yummy.

Hi Kelly, I have been stalking your blog for a while and finally made this tonight. I had to make a few adjustments as reduced fat peanut butter is rarer than a detox at Christmas and I upped the veg content with bean sprouts and white onion. I also used half the oil and two tablespoons of cooking water from the noodles to try and claw back cals from the full fat peanut butter. My verdict? It was beautiful, both I and my picky Loved One devoured it in half the time it took to cook. I am only hoping he doesn't find the portion I reserved for my packed lunch tomorrow...

Thanks again, all I need to do now is choose tomorrow's dinner from your recipe box!

I made this dish this week, but substituted tofu in for chicken -- it was DELISH!!!! I also added more veggies (mushrooms and a couple other color peppers) and will definitely be making it again! My boyfriend says he would eat this over take out any night!! YUM :-)

This is the first recipe I made from your blog and it was delicious! I made a few changes, used tahini (sesame paste) instead of peanut butter, some noodle cooking water instead of the oil. Loved it for dinner last night and just had leftovers for lunch, yummie! Thanks for the recipe.
