Caprese Pizza & Gorgonzola Raspberry Walnut Salad

Wow what a weekend, huh??

The devastating passing of Whitney Houston, an unforgettable Grammy's show last night (wtf Nicki Minaj?!?!) and well, it snowed too!  Due to all this cold weather though, I've been struggling with getting my runs in for my races coming up and needless to say, I'M FREAKING OUT.  But I suppose that just pushes me harder when I DO get a chance to go running.  Le sigh.

If only I lived the life of my lovely friend Amanda.  She writes for the gorgeous blog Marshall's Abroad and shares her travels while living in Okinawa, Japan with her hubby.  She's an amazing photographer, devoted philanthropist and it just so happens that she loves to cook too!

And she's pretty freakin' good at it.

When my husband and I aren't exploring this beautiful island, I love to cook in our teeny tiny Okinawan kitchen.

One of our favorite meals lately has been Caprese Pizza and Gorgonzola Raspberry Walnut Salad.

It's packed with healthy, fresh ingredients and is so so delicious I can't stop making it!

Fresh ingredients:

Cherry Tomatoes 
Basil
Garlic
Kalamata Olives
Mozzarella Cheese
Dough (I use this recipe!)
Olive oil
Sea Salt

Preheat your oven to 500 degrees. Halve the tomatoes, put them on a baking sheet drizzled in olive oil and sprinkled with sea salt and pop in the oven for about 15-20 minutes. This will prevent your pizza from getting soggy.

Roast them just long enough so they look like this. 

Roll out the dough, put it on a baking sheet, drizzle with olive oil, spread out the mozzarella, add the tomatoes, sliced olives & chopped garlic. Bake on 500 for about 10-15 minutes. Add the basil leaves on top!

Salad Fresh Ingredients:

Avocado
Raspberries
Gorgonzola
Croutons
Red Grapes
Walnuts
Lettuce

Chop up all the ingredients and toss with my favorite salad dressing easily made in a mason jar:

1/2c olive oil, 1/4c balsamic, & a gooood squeeze of honey to offset the tartness of the balsamic

I was so sad about Whitney Houston's passing. GMA had a special this morning I was getting all teary-eyed. She looked so radiant when she sang--such a sad loss. Anyhoo, all of this food looks amazing!!
