Tex-Mex Couscous

Do you ever come across something
that you MUST have at that very moment?

Um this recipe would be one of them.

Mexican dishes are seriously one of my favorite indulgences, but they can pretty.much.always often times be loaded with some insane calories.  Ethnic cooking doesn't have to be expensive either; more and more you'll see grocery coupons for Mexican ingredients.  I love this recipe because not only is couscous one of the healthiest grain-based products out there, but it's really high in protein, low in fat and tastes very similar to rice and pasta!  Throw some corn, tomatoes, lime juice and cilantro in the mix and you've got one hell of a combo!

I found this recipe on my Cooking Light app (which is a serious MUST have folks if you haven't already downloaded it) and I was a huge fan of how super quick this took to make, not to mention all the yummy ingredients it called for.  This would pair really well with any Mexican entree, such as skinny enchiladas {just sayin} or you could make this ahead of time and bring to work as a healthy lunch with some chicken tortilla soup.

Serving Size: 3/4 cup 
Calories: 225
Fat: 3.9 g
Carbs: 40.6 g
Fiber: 3.1 g
Protein: 6.9 g

Here are your ingredients:
Recipes adapted from Cooking Light 

1 Tbsp olive oil
1/4 cup shallots, finely chopped
1 cup uncooked couscous (about one box)
1/2 cup canned diced tomatoes with chiles
3/4 cup fat-free, lower-sodium chicken broth
1/2 cup frozen corn (mexicorn would taste good too!)
1 Tbsp lime juice
1 Tbsp fresh cilantro, chopped 

Heat a small saucepan over medium-high heat.  Add olive oil to pan, swirling to coat and then add shallots and saute for about 2 minutes until tender.  Stir in couscous and saute about 1 minute.  Add tomatoes, broth, and corn; bring to a boil.  Cover and let simmer on low heat for about 12 minutes, remove from heat and let stand, still covered, for about 5 minutes.  Fluff with a fork, stir in lime juice and cilantro.  Enjoy!

Did you use Israeli couscous? FYI - couscous is a form of pasta, albeit more whole-grainy than "regular" pasta. This would be great with quinoa, which is a whole grain that has tons of protein!
