Do you ever come across something
that you MUST have at that very moment?
Um this recipe would be one of them.
Mexican dishes are seriously one of my favorite indulgences, but they can pretty.much.always often times be loaded with some insane calories. Ethnic cooking doesn't have to be expensive either; more and more you'll see grocery coupons for Mexican ingredients. I love this recipe because not only is couscous one of the healthiest grain-based products out there, but it's really high in protein, low in fat and tastes very similar to rice and pasta! Throw some corn, tomatoes, lime juice and cilantro in the mix and you've got one hell of a combo!
I found this recipe on my Cooking Light app (which is a serious MUST have folks if you haven't already downloaded it) and I was a huge fan of how super quick this took to make, not to mention all the yummy ingredients it called for. This would pair really well with any Mexican entree, such as skinny enchiladas {just sayin} or you could make this ahead of time and bring to work as a healthy lunch with some chicken tortilla soup.
Salivating yet??
Well I hope so and you should totally go and make this ASAP.

Here are your ingredients:
Recipes adapted from Cooking Light
1 Tbsp olive oil
1/4 cup shallots, finely chopped
1 cup uncooked couscous (about one box)
1/2 cup canned diced tomatoes with chiles
3/4 cup fat-free, lower-sodium chicken broth
1/2 cup frozen corn (mexicorn would taste good too!)
1 Tbsp lime juice
1 Tbsp fresh cilantro, chopped
Heat a small saucepan over medium-high heat. Add olive oil to pan, swirling to coat and then add shallots and saute for about 2 minutes until tender. Stir in couscous and saute about 1 minute. Add tomatoes, broth, and corn; bring to a boil. Cover and let simmer on low heat for about 12 minutes, remove from heat and let stand, still covered, for about 5 minutes. Fluff with a fork, stir in lime juice and cilantro. Enjoy!

OMG I want this now. For breakfast. Yeah, it's that good.
Beautiful dish, great recipe, one I will definitely have to try soon!
Did you use Israeli couscous? FYI - couscous is a form of pasta, albeit more whole-grainy than "regular" pasta. This would be great with quinoa, which is a whole grain that has tons of protein!
This looks so good! I'm definitely trying this next week :)
Beautiful salad!
I LOVE couscous, particularly the large-grained Israeli variety. Your salad looks colorful and tasty--and I love that it's healthy to boot!
I really wish I had some cous cous to make this for dinner. Sounds delicious, Kelly!

Yum! Thanks for posting a healthy and delicious meal. Mexican meals are always just full of grease and fat, which is why I love them. This is worth a try!
This looks so delicioooOoso!!! We are always, and I mean always, looking for great alternatives to Mexican dishes!
That couscous looks so yummy! I know what you mean about being a Mexican food fan. It's so good, but definitely not diet food. :D I love how this recipe adds in all the Mexican flavor, but still manages to be healthy!

I just got a new camera back in November, and I too am having lots of fun playing with it. You've got some crazy good photography skills already!
This looks like a fabulous lunch or side dish option! Love the fresh lime and cilantro - I think I'll add some lime zest too and a few shakes of Chipotle Tabasco for some heat.
