{Guest Post Friday} Apple-Pomegranate Salad

Happy Friday Everyone!!

Now I know I say this every Friday, but I seriously have one of the most talented food bloggers guest posting for me today.  The GORGEOUS Marina from Yummy Mummy was literally the first person I ever asked to guest post for me!  Her photos and recipes are such a huge inspiration and I'm super excited to share her with y'all today!  She's a mommy to two beautiful little girls and shares her favorite recipes, do-it-yourself home decorating ideas {which are amazing I should add!} as well as pictures of her family and wonderful life in California.

Well you will be after seeing her gorgeous apple-pomegranate salad served in brilliantly cored apple cups!  Well....I'll let her introduce them to you :)  Enjoy!

Have you noticed all the pomegranates dangling from trees lately? Pomegranate seeds add a juicy antioxidant-filled crunch to any dish. Best of all they look like little rubies adorning your plate.

The flavors in this salad are delicious together. And if you're a bacon-eater, I'd throw some of that in too. It would be amazing. Oh and candied walnuts would be perfect too! Of course you could dump this all on top of some lightly dressed greens, but I thought they were so cute in hollowed out apple "bowls".

Apple Salad with Pomegranate, Avocado, and Blue Cheese
Makes 1 apple salad bowl

1 large apple
1/4 cup pomegranate seeds
1/2 avocado, diced
1 Tablespoon crumbled blue cheese
1 t apple cider vinegar

If making apple bowls, slice top off apple. Using an ice cream scoop or spoon, carefully scoop out apple flesh, leaving about 1/4" apple rim. Chop the apple flesh. In a medium bowl, toss apple with pomegranate seeds, avocado, and cheese. Drizzle with a small amount of apple cider vinegar (optional). Carefully spoon mixture back into hollowed apples. If serving with greens, drizzle greens with extra virgin olive oil, more apple cider vinegar, salt and pepper; or your favorite vinaigrette.

Love Marina and her blog!!! This dish is AMAZING! those apples are cored so perfectly they look like real apple bowls! She did a fabulous job with them! And I love the salad!

I always like little treats that use the food as the dish. I think the only hard thing about this would be clearing out space in the apple... with my "great" knife skills I would probably slice right through the apple and into my hand :P But I think I will try, anyway. What is life if you aren't willing to take risks? ;)

Yummy! I love apples with blue cheese which I'm just starting to appreciate. Basically anything with pomegranite at this time of year is amazing as well. I like your style.
