As you all know, I've become quite obsessed with finding canned pumpkin this season and {when I actually did} I pretty much bought out the entire section...don't judge. Of course NOW the shelves seem to be completely stocked, but at least I had a jump start!
Well my goal was to find a yummy cookie recipe that called for pumpkin that was relatively healthy, but still a bit indulgent and super delicious. I think I found a hit with these, see for yourself!
These iced pumpkin cookies are really soft {almost cake-like} and have a delicious spiced pumpkin flavor. The icing is definitely the perfect finishing touch, but they still taste incredible without it. One suggestion that I would make is after baking these, do not store them in an airtight container like you would normally do with cookies, as the moisture will soften them and make them sort of soggy. I found this out when I took them to work to share with everyone...oops! They still tasted good, but these cookies can sit on a plate uncovered for a few days and still be soft and delicious!

Here are your ingredients:
Recipe adapted from Allrecipes
2 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt
1/2 cup light butter, softened
1 1/2 tsp. Stevia (or 1 1/2 cups sugar)
1 cup canned pumpkin puree
1 egg
1 tsp. vanilla extract
Glaze
2 cups confectioners' sugar
3 Tbsp milk
1 Tbsp melted light butter
1 tsp. vanilla extract
Preheat oven to 350 degrees F. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves and salt; set aside. In a medium bowl, cream together the 1/2 cup of butter and Stevia (or sugar). Add pumpkin, egg, and 1 tsp. vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork. To make the glaze, combine confectioners' sugar, milk, melted butter and 1 tsp. vanilla. Add milk as needed to achieve drizzling consistency. Enjoy!

I will def be trying this recipe Kelly. I LOVE all things pumpkin, but the only problem is that I'm not a good baker (simply because you have to use exact measurments etc), but I'm gonna give this recipe a shot...mainly because you called the cookies "cake like" and Jin loves cake :)
I hope that you have a great day...do you have any low-fat pasta recipes that you want to share? :)
I've made pumpkin cookies twice this season and they are always a hit. Just something about pumpkin in October and November that doesn't taste the same in June! (Though that isn't going to stop me from hoarding pumpkin to see if that is a true statement!) ;)
Lovely! I bet these are delicious :) And good tip with the storing...its hard to keep anything with pumpkin in it from getting a little 'melty.'
Buzzed!
Kelly - These look so good! Thanks for sharing!
Ooh, pumpkin cookies! Dangerous territory! I really love all the pumpkin treats during this season!
These look so delicious :) Love anything pumpkin!
these would not last even 5 minutes at our house! :)
Oh be still my heart- those look to die for! I love the simple way you out the icing on so you get more of the pumpkin flavor rather than the sweet sugar! Great recipe and great site! So glad you visited me the other day!
Looks good Kelly and pumpkins are fav too, love that frosting on top.
Those look so good - especially with that icing!
yes. please. :) These look delish!
These look awesome! Do the WW points plus values change if I use the 1 1/2 cups sugar instead of the stevia?
Thank you! Unfortunately yes if you use sugar instead of Stevia you will have to add about 32 more calories per cookie, making them about 3 points instead of 2 :) Hope that helps!
I love these cookies. found them the other day and made them. sooo yummy!
Kelly these look great! I'll take a few with my coffee please :)
Yummy! These look like a great way to start the day! I am in love with pumpkin too and just made a pumpkin creme brulee yesterday (although not healthy like yours!).
Yum! I have made these before and they are delicious, the icing is perfect. I love your healthy modifications!
Hooray for pumpkin! And cookies with minimal guilt :) ~Megan
Perfection! I love how light these are. I wonder how they would taste with a little agave nectar. mmmm.
Absolutely beautiful cookies, darling!
These are gorgeous cookies. Pumpkin cookies with glaze on top...SCORE! Maybe the Redskins could use a couple of these before their game with Bills...push them to a "W."
These scones are perfect! I mean when I think of a scone this is what I imagine! Wow!!

This sounds and looks awesome! I love the cinnamon, nutmeg and cloves combination.
These look delicious! I think I bought out the pumpkin at my grocery store too...oops :)
Kelly -the cookies look absolutely amazing! Fantastic that you incorporated Stevia. I'd have to use Splenda. I'm a HUGE fan of Stevia, but it upsets my tummy....so thank you for including the sugar equivalent!
I am not much of a baker but these do look delish, it is time that I start doing some baking, my husband would love these. Love your photos
These look wonderful! I should probably calculate the calories for 5:-)
I would devour these so fast!
I'm not a cookie person but pumpkin and relatively healthy I can't pass up. TFS!
I'm definitely trying these out! They look super delicious and I love that they're not like 500 calories and 30 carbs for 1 cookie! :) I can eat way more now!

LOVE pumpkin cookies! They are on of my favorites this time of year. These look wonderful!
Oh man do these look good! I'm obsessed with pumpkins too, and your cookies are where it's at, especially with the icing on top. Congrats on Top 9, Kelly!! :)
These look great! I like to weigh ingredients; what weight do you use for one cup flour?
Congrats on top 9 Kelly. So well deserved. Love this!
Where I live, it is IMPOSSIBLE to find canned pumpkin, so I feel ya! I curse the people who get to the stores early enough to BUY EVERYTHING. And congratulations, I love your blog! :)
Definitely a must try!

These look delicious Kelly! How perfect for Halloween weekend!
I've been making these all season, they are just perfect!
How much pumpkin spice would I end up using? I have that from the pumpkin fudge I made. I don't have cardamon,
I made these this past week and they were a hit at work. Yummy!
Mmmm these sound amazing! Definitely taking a shot at making these. Yum!
This is definitely a recipe that will be made this week! Also - could never judge on the pumpkin pantry stock purchase. Heck, I do the same thing - thankfully Whole Paychex here in Philly has plenty because the grocery stores around me have none.
Wow, these cookies look amazing! And you say they are only 2 Points+? Sold!! Your blog is super cute!! I'll definitely be back - a lot!!
Hi Kelly, Your pumpkin obsession sounds as bad as mine, hehe:) The cookies look so delicious and ones I can't wait to try. Thanks for sharing the recipe.
Also thanks for participating in the YBR!
that is another recipe to write down to make ASAP. I have got some pumpkin and apple puree in the fridge, it should work well for these lovely cookies. Thanks for so many great recipes!
I just made these and they are amazing!!! Seriously, they are a new favorite recipe--and this is coming from someone who doesn't bake very often and isn't very good at it.
I love the texture. I reduced the sugar/Stevia because I'm not a big sweets person.
I will be using this in the near future again.
I'm confused about the stevia only being 1 1/2 tsp. wouldn't this change the consistency of the original recipe? I've never baked with Stevia so I'm just trying to make sure I do it right!
hmmmm.. i guess its delicious taste..
i like to eat them
hahaha
