{Guest Post Friday} Across the Pond Beef Brisket

Happy Friday Loves!

I'm happy to announce I am feeling MUCH better after suffering from the dreaded flu all week {sorry for the lack of posts}, but I have a guest post today that will completely make up for my absence!

Megan from the amazing blog Across the Pond has been a favorite of mine FOREVER now.  No she doesn't have a food blog, but once an LA native, she shares her journey "across the pond" {yeah, get it now?} to a brand new life in Scotland and she'll makes you laugh every second of the way.

I decided for the sake of Kelly's blog..
and occasionally my arteries,
that I would share with you my easy, healthy, secret brisket recipe.

You are welcome.

*Beef brisket (aka the easiest thing you will ever make that your husband/bf/dog will LOVE you for)
 
4-5 lb fresh beef brisket (although any size will be fine)
1 tsp salt
1/2 Cup Ketchup
1/4 Cup white vinegar
1 Tablespoon Worcestershire sauce
1 1/2 teaspoon liquid smoke
1/4 teaspoon pepper
1 packet onion soup mix
1 jar Chili Sauce
2 Cups Beef or Chicken Broth
1 Bay leaf

Heat oven to 325 degrees (unless putting in slow cooker)
Rub surface of beef with salt.  Place in ungreased rectangular pan, 13 x 9 x 2 inches. 
Mix all ingredients and pour over beef.
Cover and bake about 3 hours or until beef is tender
Cut thin diagonal slices across grain at an angle from 2 or 3 "faces" of beef.  Spoon any remaining pan juices over sliced beef if desired.
Remove bay leaf

BUT DO IT IN A SLOW COOKER on low for 8-9 hours or high for 4 hours.



I served mine with french beans cooked in a skillet with garlic and lemon juice
and mashed potatoes with about a mound of butter and cream..
I know.
I did the best I could on the health front. 
so sue me.

Your post has perfect timing, I plan to make Brisket for Belle's Birthday Party tomorrow. I may have to try this recipe, mine looks boring compared to this. PS. Jingle Belles, our lab, is going to be 7 and there will be 4 labs here to celebrate with a pool party :)
