Classic Macaroni Salad

Need a yummy recipe for an all-day tailgate or just want an easy side dish to go with your turkey burgers or hot dogs??  Umm this macaroni salad is my all time FAVORITE!  I seriously love, love, looove it!!  I know summer is sadly over {tear} but you can have macaroni salad any ole' time!

I got this super delicious recipe from my dear friend Katie who brought it to cookout we had over the summer.  It was such a hit the entire dish was GONE in under an hour {and I'm pretty sure she doubled the recipe}!  Yep it was that good so I seriously suggest you try it.  I decided to lighten this dish up by using Dreamfields Pasta which is a healthy {and delicious} low-carb pasta, used light mayo and substituted the sugar for Truvia, a zero calorie sweetener.  I think it turned out pretty good!

Here are your ingredients:
Recipe adapted from Allrecipes

1 box Dreamfields macaroni
1 cup light mayonnaise
1/4 cup distilled white vinegar
2 1/2 Tbsp Truvia (or 2/3 cup white sugar)
2 1/2  Tbsp Dijon mustard
1 1/2 tsp. salt
1/2 tsp. ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped

Bring a large pot of lightly salted water to a boil.  Add the macaroni, and cook until tender, about 8 minutes.  Rinse under cold water and drain.

In a large bowl, mix together the mayonnaise, vinegar, Truvia (or sugar), mustard, salt and pepper.  Stir in the onion, celery, green pepper and macaroni.  Refrigerate for at least 4 hours before serving, but preferably over night.  Enjoy!

So I definitely plan on bringing this, along with my highly requested corn dip {duhh!}, to our next Redskins tailgate.  Of course I can't forget some zero calorie lemonade and Skinny Firefly, yummm!

Okay, I don't like "salads" (potato, macaroni, etc) but I like making them. Is that weird? I'll be busting this out for the Mr and maybe get some low carb pasta so a few diabetic family members can partake with less spikes to worry about.

Kelly... I read this post, had all the ingredients, and decided to make it! It's in the fridge chilling, but obviously I had to sneak a taste to make sure the flavours were right! Definitely a simple, tasty recipe and I'm anxious to see how the flavours develop as it chills! Great post!

So I used to live in Hawaii and we theres something called a "plate lunch"..protien, rice and...mac salad! I kid you not, it's a staple in Hawaii and sooo good! So when I saw this post, I honestly automatically thought of home, Hawaii! haha

Ok Kelly... After thorougly chilling in the fridge, I have decided the macaroni salad is good! However, I'm going to elaborate on the subject because my husband had a few select words to say on the matter. It's crucial for me to explain that I'm from Iowa and my hubby is from England! The first words out of his mouth were 'Why are you American's so obsessed with vinegary salads?! Why can't you just make creamy, tasty salads without the zing?!' Suffice to say, he didn't like the vinegar aspect of the recipe and the dijon mustard here in England is way stronger than what we have in America. I like it as is, but since I'm the American, I guess that's ok! Lol! Next time I'll have to reduce the vinegar and dijon a bit in order to please the hubby but I enjoyed it! I'm finishing the rest today for my lunch!

This one in particular looks delicious. However, I don't have Truvia so will be using sugar - surely 2/3 CUP of sugar isn't right?? Was that a typo? Did you mean 2/3 Tablespoon?
