I must say I am absolutely LOVING these Guest Post Fridays. I have met some incredibly talented bloggers and my guest today is NO exception! Most of you probably know her, but those of you who don't, today is your lucky day.
Meet Jill Colonna. She is a baker, a blogger, a mother, an author and macaron extraordinaire! (Whew! She's quite talented) Oh and did I mention she lives in Paris?? Yep, I sure am envious. Jill's passion for these adorable little pastry treats is evident in her amazing (and highly addicting) blog Mad About Macarons! and her talent is no less apparent. I mean one look at her gallery and you'd think you walked right into a sweet little pastry shop right off the streets of Paris.

When Jill offered to guest post on my blog my jaw dropped! A real-life author straight from Paris wanted to share a recipe on MY little blog?! No way. She's also one of the sweetest people I have ever had the pleasure of chatting with. I am beyond honored and so happy to introduce her to you all! I'm so excited to be a guest on Kelly's blog, Eat Yourself Skinny. I first discovered Kelly's blog via her Facebook page. The title was just too intriguing. I mean who doesn't dream of eating away, enjoying their food - AND being skinny at the same time? When you take one look at the gorgeous Kelly, you immediately hit, "Like", "Wish I Could Be-Like", "Want to Be-Like"...I even tried a Thai anti-aging facial on holiday to look like Kelly. No luck, but they did make better use of the hotel's tummy-stripping coffee by using it as a beauty treatment.
When I first came to live in France, I was particularly impressed to see how French women are just, well, so slim. How could they be so slender yet enjoy their food so much? They also love their wine, too. In fact, there's something strikingly similar to Kelly's wonderful view of enjoying food. Kelly's readers don't need any introduction to her tasty and healthy recipes. Each on is just as good as the other! So what on earth could I prepare for her skinny-conscious readers?
Luckily at this time of year, there is no shortage of inspiration. The French lavender is out in full bloom, raspberries are poking out to say bonjour behind the leaves and peaches are abundant at the market. Who could ask for more?
Well, perhaps my youngest daughter would. When it comes to eating fruit, she's funny. Ask her to eat a peach and it takes a painstaking 30 minutes to finish it all up. Give her a donut peach and mentally, the process is slightly quicker. Don't even try her on raspberries. They're hairy, she says.
Until one day I won the fruit jackpot in Mummy land. Ever since I made this gluten-free peach dessert stuffed with raspberries, there has been no turning back. She gobbles this one up in record time and asks for more. How can you explain that one?
Sticky Amaretti Lavender Peaches
Here are your ingredients
Preparation time: 10 min • Cooking time: 25 min • Chilling time: 30 min
4 large ripe yellow-fleshed peaches
2 Tbsp honey
100 g amaretti biscuits (about 1 cup)
Handful of raspberries
1 egg yolk
10 g brown sugar (about 1 1/2 Tbsp)
1 tsp. lavender flowers
Knob of butter (about 2 Tbsp)
Preheat the oven to 350 degrees F (or 180 degrees C). Wash, halve and stone the peaches. Scoop out a bit of pulp to make slightly bigger holes. Crush the amaretti biscuits - either in a mortar and pestle or place them in a bag and bash them about with a rolling pin (particularly effective if you're needing to get some frustration out of the system.)
Add the egg yolk, honey, raspberries, lavender and the left-over peach pulp and mix well. Fill the peaches with the mixture and place in a buttered ovenproof dish. Sprinkle with the sugar and roast for 25 minutes. Set aside to cool then chill in the fridge until needed.
The baked peaches are delicious served on their own for a perfect end to a meal. However, if you are feeling rather decadent, then add a petit dollop of vanilla ice cream. And if you're like Kelly who enjoys her dessert wines, I would definitely recommend serving this with a chilled glass of her favourite Moscato.
