Watermelon Martinis

Fresh watermelon is my absolute FAVORITE and I had so much left over from the 4th of July weekend that I wanted to use.  So what do I do with leftover fruit on a gorgeous Thursday??  Make a cocktail of course!  

This is such a fresh summer martini and your girlfriends will love this when served at your next gathering :)  I mean seriously, at only 90 calories per cocktail, who wouldn't love this?!  Careful not to drink too many though, they sure do go down fast!  I got this fabulous recipe from Gina's Skinny Recipes and I just had to try it.  Trust me, it doesn't disappoint :)  Plus!  It's about time I posted a new cocktail recipe, it's been forever and THAT is just not acceptable.

Seriously I love Summer.  I really think it's my absolute favorite time of the year (besides Christmas of course) and no matter what crazy stuff is going on, sunshine and sundresses just always seem to make it all better.  Also, you can't forget that fruit is much more in season, veggies grow more abundantly and you have more of an incentive to eat healthy since you'll be rockin' that swimsuit almost daily!  Hope you guys are having a fabulous summer so far and I really hope you enjoy this yummy cocktail as much as I did!

Serving Size: 6 oz. + 1/4 cup watermelon
Calories: 90.3
Fat: 0.5 g
Carbs: 11.6 g
Protein: 0.9 g
Fiber: 0.6 g 
Sugar: 7.6 g
Old Points: 2 pts
Points+: 3 pts

Here are your ingredients:
Recipe adapted from Gina's Skinny Recipes

3 cups seedless watermelon
2 oz. Absolut Citron
1 oz. Midori Melon liqueur
1 oz. fresh lime juice
1 cup ice cubes
Lime wedges for the garnish

Dice one cup of watermelon into small cubes.  Puree remaining 2 cups of watermelon in a blender and add vodka, liqueur, lime juice and ice and blend well.  Pour 6 oz. martini into each martini glass, add 1/4 cup remaining watermelon into each glass and garnish with lime slices.

For those who don't drink alcohol, add ice cubes and replace it with a splash of orange juice.  Enjoy!

Absolut is my absolute favourite! Here in New Zealand we also have a fantastic vodka called 42 Below and the Fejoa flavour is to die for, I'm not sure whether they export to the states. Congrats on being accepted into foodgawker go girl!
