Ok so I'm very disappointed at how my picture turned out, ahh I need a new camera so bad! BUT the cookies were delicious!! I got this recipe out of my Cooking Light magazine and just had to make them when I saw all the ingredients. I bet you'll already have most of them on hand! Oatmeal cookies are probably one of my favorite desserts and this is an amazing low fat version. I love the crunchiness of the walnuts with the sweetness of the coconut, oh and don't forget the hint of rum! I plan on taking them into my office tomorrow to share the wealth, mmmmmm. Hope you like them!

Here are your ingredients:
2/3 cup packed dark brown sugar
1/2 cup ripe mashed banana (about 1 medium)
1/2 cup reduced-fat mayonnaise
1 tsp. rum
3/4 cup all-purpose flour (about 3 1/3 oz)
1 cup quick-cooking oats
1/2 cup flaked sweetened coconut
1/2 cup golden raisins
1/2 cup chopped walnuts
1 tsp. baking powder
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Dash of ground ginger
Preheat oven to 350 degrees F. Place brown sugar, banana, mayonnaise and rum in a large bowl. Beat with a mixer at medium speed until blended. Lightly spoon flour into dry measuring cups; level with a knife. In a separate bowl, combine flour and remaining ingredients, stirring with a whisk. Stir in flour mixture into banana mixture. Drop dough by 2 tablespoons onto parchment paper-lined baking sheets. Bake at 350 for 19 minutes or until lightly browned. Remove from pan; cool completely on a wire rack.

I believe that they are very delicious, I can see that from the ingredients :)
P.S. I need new camera beadly too.. :)
That picture is fine enough to show how amazing the cookies look. I was surprised by how much I liked Cooking Light last time I tried it. I lament the lack of salt, but, like with these cookies, they can do amazing things to make goodies take great but not add on (if you get my drift).
These sound amazing!! BTW, I'm sure I've told you before, but I love that you post the nutritional info on here!! :)
Banana, coconut, rum... all the makings of the perfect beach cocktail! even better in a cookie :) these have to be amazing, i've gotta try them!
made these tonight for my family. I made them gluten free by using gluten free ap flour and they turned out so great! Found you on pinterest and am in love at first cookie!
I was super weirded out by the mayo, I'll be honest, when I first saw the recipe. Especially since i think it may be the grossest condiment on the planet. BUT, that being said, I made them tonight, and they were fabulous! Seriously so good, and I didn't even feel bad about enjoying them :) Thanks so much for the recipe!
I made these this afternoon, and I love them! I'm going to take them to an office party tomorrow, for all of us dieters! Thanks!
