Skinny Strawberry Cheesecake


I'm so excited to eat this dessert tonight!  I found this recipe on Gina's Skinny Recipes blog and absolutely fell in love with it.  I decided to make a few modifications and since I have my girlfriends coming over tonight I thought this would be the perfect thing to serve with some wine!  I apologize for the picture though, I'd really love to have a better camera and cute place mats to place it over, but don't worry I'll get there!  Anyway, this no-bake yummy cheesecake is around 200 calories and is really easy to make.  Took me about 5 minutes!  Hope you like it!

Here are your ingredients:
Recipe adapted from Gina's Skinny Recipes

8 oz Cool Whip Free
1 (8 oz)  package fat-free cream cheese
9 inch reduced fat Graham Cracker Crust
1/4 cup sugar or 6 Splenda packets (I used Splenda)
2 tsp. vanilla extract
12-14 strawberries, hulled and halved lengthwise

In a large bowl, whip cream cheese, vanilla extract and Splenda (or sugar) for a few minutes until fluffy.  Add Cool Whip and whip until smooth.  Spoon mixture into pie crust and chill for a few hours in the fridge, until firm.  Arrange strawberries on top and serve.

The strawberry cheesecake was great!!! Rick is still looking for more of it in the refrigerator -- sorry buddy, but we ate it all!!!

This looks amazing! I wish that we had low fat ingredients here in Israel. I miss splenda and low fat cream cheese. There is no such thing here!

I made this tonight...and before putting it into the crust, of course I had to take a little taste. I'm going to post at Gina's as well. It was delicious, BUT, for me a little too sweet. I think next time I will eliminate the sugar. It could certainly be MY taste... as I don't use sugar in coffee or tea, so....I'm accounting for that. I think tho, next time I make it, no sugar at all and see if it is sweet enough with just the cool whip.

Oh, haha, I'm back again. I wanted to add that IN the crust, with the crust, it tastes less sweet, almost the perfect bite. I will, however, eliminate the sugar altogether next time, as that would be my personal preference. This is a wonderful alternative to regular cheesecake, and I like that it doesn't require artificial sweeteners too. Highly recommended!

I love cheese.. and i love cheesecake! my mom asked me to make a nice Easter dessert so I went on your blog since it is all about healthy eating and I picked one of your desserts to make; this one! I haven't had the chance to eat it yet since it is only the afternoon but I cannot wait to try it tonight! Thanks for the recipe! it looks really good and I am glad there are alternatives when it comes to making a dessert that isn't a bagillion calories!
