YAY my very own creation! The boyfriend and I were watching a movie and decided we were hungry so I pulled together a bunch of ingredients I already had on hand and....VOILA! This dish actually turned out super yummy! The sauce was very light as I used olive oil and just a bit of butter, sauteed that with garlic and sliced red peppers. I also added some fresh lemon juice to give it a bit of zest and a pinch of red pepper flakes for some kick. I was actually really skeptical about how this would turn out, but we both loved it. I promise I wouldn't post this unless I gave it my own personal stamp of approval! This would be great as a side with some chicken or perfect on its own, I hope you like it!

Here are your ingredients:
1 box of Dreamfield's spaghetti
1/2 red bell pepper, sliced
3/4 cup olive oil
4 cloves of garlic, minced
3 Tbsp. light butter
1 tsp. lemon juice
2 pinches red pepper flakes
1 cup Parmesan cheese
Salt and pepper, to taste
Boil water and cook pasta per box instructions until al dente. Meanwhile, saute olive oil, butter, garlic and red bell pepper on medium heat for about 5 minutes. Add lemon juice, red pepper flakes, salt and pepper and allow to simmer until ready to toss.
Drain pasta and immediately toss with Parmesan cheese. Add the sauteed garlic sauce, sprinkle some extra Parmesan cheese on top and garnish with some fresh parsley.

This dish was delicious...I made it tonight! My only question is about the calories..the olive oil alone is over 1400 calories and then there is the entire box of spaghetti...I got roughly 630 calories/serving when I did it out...it's really tasty though!

I also noticed that the calories provided don't match up with the calories from the ingredients.
By using fat free I can't believe it's not butter, about half the amount of cheese, 1/4 cup of olive oil and noodles like ronzoni smart pasta you can get it down to about 300 calories a serving that is low in cholesterol, sodium and sugar and high in calcium and thiamin.

Made this tonight and it was so tasty! I used 365 whole wheat linguine, more bell peppers, more red chili flakes, a bit more garlic, Smart Balance and half a lemon for juice. . . . and it still tasted great! Light yet filling.
Adding lemon zest to this would give it that little extra something. :)
