"Ahh! I thought this was a healthy blog?!?"
I know, I know....that's what you're thinking, but YES this is actually low in fat and calories and YES it does taste really good! I came up with this recipe by looking up all sorts of different recipes and actually took a few main ingredients from each and made my own. I really didn't think this would turn out as great as it did because there is no butter or heavy cream used, but it was super yummy! Feel free to add some roasted red bell pepper for additional flavor or throw in some mushrooms. Let me know how you like it!

Here are your ingredients:
1 box Dreamfields fettuccine pasta
1 Tbsp. extra virgin olive oil
4 gloves of garlic, minced
2 cups of skim milk
1 cup of chicken broth
4 Tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup grated low-fat Parmesan cheese
Begin by cooking the fettuccine noodles per the box directions. I prefer mine cooked al dente. In a medium saucepan, heat olive oil over medium heat. Add garlic and saute until golden brown.
In a small saucepan, stir together milk, chicken broth, 3 Tbsp. flour (save 1 Tbsp. of flour for later), salt and pepper over low heat until smooth and thick. Stir into garlic. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. Add the last Tbsp. of flour (for additional thickness) and stir in with Parmesan cheese. Cover and let sit for a few minutes so that the sauce thickens up even more. Pour over fettuccine noodles and garnish with parsley if desired.

I'm going to try this out tonight! I couldn't find low-fat parm, any advice? Also, I am wondering how you came up with so few calories as your total when 1 serving of pasta (2 oz) is already 190 calories? You say to use the whole box, which would work out to about a 2 oz serving of pasta... are you actually using less?
Sarah! Wow thank you SO much, you caught a huge mistake of mine and I'm so sorry! It was never my intention to mislead you, I must have completely miscounted the pasta when doing this post. I've changed it now and will double check my calculations again :) It's still 5 points per serving which isn't bad for a serving of fettuccine so I hope you enjoy it!! Thanks again for catching that mistake :)
It turned out delicious! I grilled up some asparagus and creminis to toss in and didn't end up needing the full 2 oz serving of pasta anyhow. Great recipe - this is a keeper! Thanks :D
Can you use almond milk with this instead of FF milk???
I use almond milk in everything. Everything!!!! I cook all the time and I have yet to have something turn out wrong. In crepes, I have to water down the almond milk a bit (some brands are thick). Keep in mind that vanilla almond milk should be used for sweets and original for savory foods. If almond milk doesn't work for this recipe, it will be a first for me
I made this last night and was a little skeptical at first. I've made homemade alfredo before and these ingredients were a LOT healthier than the ones I've usually used, but holy FREAKING cow - it was delicious!! Seriously. I'm curious about how you got your points plus values. When I build it in the weight watchers recipe builder this comes out over over 10 points a serving. I know your nutritional information translates to the points, but the ingredients don't. Where do you get your nutritional information?
Hmm I'm not sure how it came out to 10 points, I will definitely double check! I use an app called MyFitness Pal which calculates the nutritional facts for me and then I get the points values based off that. Thank you for letting me know, will check now! :)
I made this for dinner when some friends came over... we are all on WW and it was a hit! We added some grilled chicken breast for some protein. Deeeee-lish! :)
I made this last night for dinner and it was delish! I added chicken to bulk it up a bit. I debated adding broccoli but didn't because I wasn't sure if there would be enough sauce... but there definitely would have been! This is a great makeover recipe to add into my weekly rotation! The only thing I would do differently is probably had a little Italian Seasoning or something to give it a little extra zing... but it was still amazing without it!! :)
Do you think using whole wheat pastry flour in place of white flour would work ok? I am trying to eat clean as much as possible and I'm seriously wanting to try this recipe!!

Yum!! Found you on Pinterest today, as I was looking for a dinner recipe...I recently started the "Belly Fat Cure" diet, and needed something delicious, but also within my sugar/carb allowance for the day! This was perfect!! I was so proud of myself for using real garlic and mincing it myself!!
I had to add about half a tablespoon of corn starch to get the sauce to thicken, but that might be due to high altitude...still, super delicious!
I made this recipe tonight and all I can say is WOW! So good!! I never thought I would be able to have fettucine alfredo and still stay within my calories for the day. You totally nailed this comfort food recipe- it was delicious. Thank You! Now I can't wait to try some more of your recipes:)).
Hi! I stirred in the last tbsp of flour at the end and it clumped up everywhere... suggestions on how to prevent that in the future?! I think I put in a little too much garlic (because I just dumped some in) but I will definitely make this again! I just used a fine sift to pull out the clumpy flour this time so not a big deal!
